Ingredients

olive oil

onion, finely diced
▢
1
yellow or orange bell pepper, seeded and diced
▢
1
head
cauliflower, chopped in food processor until it resembles rice
▢

teaspoons
fresh ginger, minced
▢
3
cups
fresh spinach, roughly chopped
▢
1
cup
shelled edamame
▢
3
tablespoons
low sodium soy sauce
▢
1/2
teaspoon
kosher salt
▢

scallions, chopped
Instructions
Heat a large wok or sauté pan over medium heat, add oil and sauté onion and ginger for 1 minute. Add bell pepper and cook for 1 minute.
Add cauliflower and cook for an additional 2-3 minutes. Add spinach, edamame, soy sauce and salt. Cook for 3-4 minutes or until cauliflower is tender.
Top with chopped scallions and serve.
