Lemony Quinoa Salad

Ingredients  

  • 1 cup cooked quinoa
  • 1/2 cup thinly sliced radishes
  • 1/4 cup thinly sliced cucumbers
  • 1/4 cup halved cherry tomatoes
  • 1 tablespoon olive oil
  • 2 teaspoons lemon juice
  • 1/4 teaspoon kosher salt

Instructions 

  • In a bowl, combine the quinoa, radishes, cucumbers and tomatoes.
  • In a small bowl, whisk together the oil, lemon juice and salt.
  • Pour the dressing over the salad and toss to combine.
