This beet puree recipe will brighten up your little one’s plate and is so easy to make. Get the bibs ready for this colorful vegetable that’s super healthy!
2beets (any color),washed with stems and leaves removed
Instructions
Preheat the oven to 375°F.
Place beets on one side of a piece of aluminum foil or parchment paper and fold in half over the beets like a book. Pinch the edges to fully seal the package (this way they will steam in the oven while they roast).
Bake for 45 minutes until fork tender.
Open the foil, and let roasted beets cool until you’re able to touch them.
Use a ziplock bag or gloves to cover your hands and peel the beets. This prevents your hands from getting stained. The skin should slide right off.
Cut and puree beets in a food processor until smooth. Add water little by little if you need to thin out the puree.
Serve or make a baby food combination with another puree.
Notes
Use red or gold beets. They both have a host of nutritional benefits, the main difference is gold beets won’t stain as much if you’re worried about that.
Grab a bib! It comes with the territory (but can also be kind of fun), but beets do stain and can make a mess. Pull out your biggest bib or tape a plastic garbage bag all around your baby. The potential mess is worth it though, trust me.
The easiest way to peel beets is to roast them with the skin on. The skin will peel right off. Wear a pair of gloves or cover your hands with a plastic bag so you can avoid staining your hands.
