Chilled Avocado Soup

Ingredients

medium avocados
halved and pitted
1/2
cup
plain greek yogurt
2
tablespoons
freshly squeezed lemon juice
1 1/2
cups
low sodium chicken or vegetable stock
1/2
teaspoon
kosher salt
Instructions
Spoon the flesh of the avocados into a food processor. Add the remaining ingredients and blend on high until smooth.
Transfer to the refrigerator until chilled.
Serve with desired accompaniments.
Accompaniments: crumbled bacon, diced red onions, sour cream, grated cheddar cheese or diced tomato
