Place 15 banana slices on a parchment lined baking sheet or a plate.
Top each banana with ½ teaspoon of peanut butter.
Top with another banana slice to make “sandwiches”.
Freeze the bananas for 1 hour or more.
Melt coconut oil and chocolate chips in a glass bowl in the microwave for 30 seconds-1 minute or a in small saucepan over low heat for 2-3 minutes or until completely smooth, stirring continuously. Allow the chocolate to come to room temperature, about 5 minutes.
Using a fork dip the peanut butter bananas in the chocolate until completely covered allowing the extra chocolate to drip off.
Place the chocolate covered bananas back on the parchment and freeze for an hour and up to 24 hours.
Place the frozen chocolate peanut butter banana bites in zipper bags on containers and store in the freezer for up to 3 months.
Notes
Work In Batches: If you're making a big batch, only take a few banana bites out of the freezer at a time when dipping in chocolate. They can start to thaw and get slippery quickly, which makes them harder to handle (and messier!). Keeping the rest frozen until you're ready helps everything go smoothly.
Let the Chocolate Cool Slightly: After melting, let the chocolate sit for a few minutes before dipping. If it's too warm, it can melt the peanut butter or cause the banana to slide.
Parchment Is Your Friend: Don’t skip lining your tray! It keeps everything from sticking and makes clean-up a breeze.
Storage: These keep well in the freezer for up to 3 months in an airtight container or freezer bag. Be sure to label them with the date so you remember when you made them!
