Ingredients
4
ripe peaches
2/3
cup
old fashioned rolled oats
1
tablespoon
flaxseed
1/3
cup
all purpose flour
4
tablespoons
butter, chilled
3
tablespoons
sugar, honey or agave nectar
Instructions
Preheat oven to 375°F degrees.
Chop the peaches and divide between 6 ramekins (or spread in an 8x8 inch baking dish).
In a mini food processor, combine the oats, flaxseed, and flour. Pulse to combine.
Add the butter and sweetener and pulse until the butter is in small pieces. Don't overdo it, you want crumbly, not a dough.
Scatter small clumps of the crumble over the peaches.
Place the ramekins on a sheet tray and bake for 20 to 25 minutes, until golden.
Notes
To bake in an 8x8 inch baking dish (or similar sized dish), bake at 375°F for 35 to 40 minutes, until the crumble is golden.
Works with any stone fruit. Try plums, nectarines, apricots, or a mix.
For the crispest topping, make sure your butter is well chilled before pulsing it in.
Store leftovers covered in the fridge for up to 3 days. Leave uncovered the first day to keep the topping crisp.
