Easy BBQ Chicken Sandwiches

BBQ Chicken Sandwiches are an easy weeknight meal and a perfect way to use leftover roast chicken! Top with some coleslaw for added crunch and you've got a total crowd pleaser!

  • Start by shredding leftover roast chicken. If there are any bones or skin, remove them. You'll want the tender chicken meat for your sandwich.
  • Place the shredded chicken in a skillet over medium heat. Add your favorite BBQ sauce and stir until the chicken is thoroughly coated. Let it simmer for a 2-3 minutes to absorb flavors.
  • While your chicken is heating up, lightly toast your hamburger buns in the oven or on a stovetop griddle. This step adds a delightful crunch to your sandwich, but you can skip it if you prefer them un-toasted.
  • Once the buns are toasted, assemble your BBQ Chicken Sandwiches. Start with a generous portion of BBQ chicken on the bottom bun. If you like some crunch and freshness, add coleslaw on top. Finish it off with a few pickles for that tangy kick.
  • Plate your BBQ Chicken Sandwiches and serve.

Notes

Meal Prep Idea: You can make these sandwiches using leftover Slow Cooker BBQ Chicken or Lazy BBQ Chicken too!
