Place the tortillas on a flat surface in front of you.
Spread half the refried beans and half the shredded cheese onto the center of each tortilla.
Fold each tortilla into a square by folding in the two sides first, then folding in the top and bottom.
Lightly spray or coat the air fryer basket with olive oil.
Place the tortilla pillows folded side down in the air fryer basket and air fry at 400°F for 8 minutes, or until the outside is crispy and the filling is warmed through.
Serve warm, sliced in half if desired.
Notes
If your tortillas feel stiff or crack when folding, microwave them between two damp paper towels for 10 seconds to make them pliable.
Cook in batches if doubling or tripling the recipe -- don't crowd the air fryer basket.
To make in the oven instead, bake at 350°F for 20 minutes.
Leftovers keep in the fridge for up to 2 days. Reheat in the air fryer at 350°F for 3 to 4 minutes to bring the crispiness back.
