Rainbow Yogurt Popsicles are packed with superfoods and an extra protein kick from creamy yogurt. The perfect wholesome treat for your kids when the weather warms up!
1/2cup black berries, fresh or frozen and defrosted
13.53 ounce packacai, defrosted
Instructions
Place raspberries and 1/2 cup yogurt in blender and puree until smooth. Divide evenly between 12 large popsicle molds and freeze for 5-10 minutes.
Place mango and 1/2 cup yogurt in blender and puree until smooth. Pour on top of raspberry mixture in popsicle molds, and freeze for 5-10 minutes.
Place pineapple and 1/2 cup yogurt in blender and puree until smooth. Pour on top of mango mixture in popsicle molds, and freeze for 5-10 minutes.
Place spinach and 3/4 cup yogurt in blender and puree until smooth. Pour on top of pineapple mixture in popsicle molds, and freeze for 5-10 minutes.
Place blueberries and 1/2 cup yogurt in blender and puree until smooth. Pour on top of spinach mixture in popsicle molds, and freeze for 5-10 minutes.
Place blackberries, acai and 1/4 cup yogurt in blender and puree until smooth. Pour on top of blueberry mixture in popsicle molds, and freeze for 5-10 minutes.
Place popsicle sticks in molds and freeze overnight.

Notes
To ensure the layers of color don't bleed into each other, make sure that each layer is frozen before pouring the next layer on top. At least 5-10 minutes in the freezer for each layer should be perfect.
You can use a spoon to place the mixtures into the popsicles, but I've found that pouring the mixtures into a measuring cup with a spout and using that to pour into the molds gives you more control.
As you add more layers, it can sometimes be challenging to place the popsicle sticks into the molds through the other frozen layers. I will use a small paring knife to make a slit to stick the popsicle sticks into. You might need to use your muscles if they freeze too solid!
