When you’re raising kids it’s funny how so many of your own personal tastes and culinary passions automatically get passed on to your little one(s. What you eat during your pregnancy will likely be what they crave. As a family we don’t eat a lot of red meat, so neither does Kenya.
I do love myself a hamburger, but most of the time I prefer to make a good turkey burger for several reasons: One, turkey meat is a lot less expensive then the high quality grass-fed beef that I would want to buy (most beef produced in this is corn-fed and since cattle do not naturally eat corn, producers must pump them full of antibiotics so the corn does not make them sick). I bought 1.5 pounds of 7% fat ground-turkey for $3.82 (Which makes the meat in this recipe come out to be a little over $1 (since I only needed less then a 1/3 of the package). While I was shopping I also checked out organic ground meat and it was over $13 for the same amount!
Turkey is packed with nutrients: B vitamins, iron and more zinc then chicken. It’s also known as a mood booster which we know every little one can use now and then.
Most of all, I love the flavor of turkey. It’s mild and when served with a piece of cheddar cheese melted between two slices of bread, it’s a perfect protein-packed meal.
Turk-wee Burgers (Make 12 Mini Burgers)
1/2 Lb 7% Fat Ground Turkey Meat
1 Tbsp Shallot, minced (you could also use onion)
1 Tsp Worcestershire Sauce
1 Tsp Oil
12 1 Inch Slice Cheddar Cheese
3 Slices Whole Wheat Bread
1. Place the turkey, shallot and Worcestershire sauce in a bowl and mix with your hands until throughly combined.
2. Preheat a large skillet over medium heat. Coat the pan with the oil.
3. Cook the burgers for 3 minutes and flip to the other side.
4. Cook the burgers an additional 2 minutes.
5. Place a slice of cheese on each burger and cover the pan for 1 minute.
6. Using a 1 inch circular cookie cutter, cut out 4 circular “buns” out of each slice of bread (I used the cap to a plastic medicine bottle-improvise!)
7. Preheat a broiler and toast until golden.
8. Serve the burgers in the “buns”.
*Holding the buns can be a tough for many toddlers. You can also just
serve the burgers without the “buns” and cut the burgers into bite size pieces.

I wanted to cook something festive and naturally colorful for the 4th of July and came up with this heavenly blue potato gratin. Not wanting it to have a heavy
cream sauce, I thought that the idea of “cauliflower cream” sounded so
much more nutritious and delicious. Its kind of surprising that the cream’s main ingredient
is a vegetable since it has such an undeniably rich taste. Let it be known, though, I don’t
want to deceive Kenya into thinking he’s getting cream sauce. I want him to know
that even cauliflower can be the star ingredient of a dish and give you just as much flavor, if not more, than heavy cream.
This is one of those perfect dishes to serve on the fourth because the
adults will dig it too. I made it for a party and everyone loved the
red, white and blue theme. Kenya loved peeling apart the layers and
eating them one by one. Although weelicious stands by the concept that every recipe should be easy,
fast and fresh, this one might take you a few extra minutes. But for
me, it was worth it!
Blue Potato Gratin with Cauliflower Cream and Sun-dried Tomatoes (15 Toddler Squares)
1 1/2 Cups Cauliflower Florets
3/4 Cup Whole Milk
1 Garlic Clove
1/3 Cup + 2 Tbsp White Cheddar Cheese, grated
4 Blue Potatoes
12 Sun-dried Tomatoes, oil packed or sun-dried and then rehydrated in hot water for 10 minutes, chopped
1. Preheat the oven to 400 degrees.
2. Place the first 3 ingredients in a saucepan, cover and bring to a boil. As soon as it boils, lower the heat to a simmer.
3. Steam the cauliflower for 6-8 minutes, or until fork tender.
4. Place the cauliflower mixture (you may not need to use all of the milk) and 1/3 cup cheese in a food processor and puree until smooth.
5. Slice the potatoes, preferably on a mandolin or by hand into very thin slices.
6. In a buttered 9×5 loaf pan, make a double layer of potatoes (this will use about 20 thin potato slices).
7. Cover with a tablespoon of the chopped sun-dried tomatoes.
8. Make another layer of potatoes.
9. Cover with a thick layer of cauliflower cream.
10. Make a layer of potatoes.
11. Cover with a tablespoon of sundried tomatoes.
12. Make another layer of potatoes.
13. Cover with a thick layer of cauliflower cream.
14. Spinkle the top with cheese and cover the loaf pan with tin foil.
15. Bake for 45 minutes. Uncover and continue to bake 10 more minutes until cheese becomes golden.
16. Throughly cool, cut into 15 rectangles and serve.

Meatloaf is THE all-American food. I always think of it as the dish that you either love or absolutely hate. I’ve also seen hundreds of recipes for it and people are extremely passionate about what they think does and doesn’t belong inside. My mother must have used an entire bottle of ketchup on hers. I’ll refrain from commenting.
My version of meatloaf is perfect for the whole family, but especially for your little one. The best part is they’re cooked in mini muffin pans, so they only take 20 minutes to bake. I pack mine with vegetables and since there’s no salt or sugary ketchup, I add some cheese which makes every bite taste heavenly. Kenya had such a grin on his face when I gave him his first one. He tried to shove the entire thing in his mouth, but luckily I cajoled him into letting me cut it up.
Cheesy Turkey Meatloaf Bites (24 Mini Bites)
1 Zucchini, chopped
1/2 Cup Onion, chopped
1/2 Cup Red Bell Pepper
1/2 Cup Baby Carrots (about 
1 Egg, beaten
1 Garlic Clove
1 Tbsp Worsteshire Sauce
1 Tsp Italian Herbs
1/2 Cup Bread Crumbs (whole wheat, preferably)
1/2 Cup Cheddar Cheese, white or orange, shredded
1 Lb. Ground Turkey (93% lean ground meat)
1. Preheat the oven to 375 degrees.
2. Spray a nonstick mini muffin tin with vegetable oil cooking spray or grease with oil.
3. Place all of the ingredients, except the turkey, in a food processor and pulse until everything is combined and the vegetables are in tiny pieces.
4. Place the ground turkey and vegetable mixture in a bowl and throughly combine (using your hands is the easiest way to do it).
5. Place about a tablespoon of the meatloaf mixture in the muffin pans and pack down with a spoon.
6. Bake until the mini turkey loaves are cooked through or an instant-read thermometer inserted in the center registers 165 degrees F, about 20 minutes.
7. Cool and serve.

Parents always complain to me that they can’t get their kids to eat broccoli. Still, I try to find new ways to use it in recipes, because broccoli is not only packed with beta-carotene, folic acid and vitamin C, it’s a fun food for toddlers to pick up.
Kenya loves holding the little “trees” and munching off the tops and then making his way down the stalk. Instead of “sneaking” or “hiding” it in your kids food, let them know how good it is for them. Eat some yourself and show them how much you love it or try dipping in hummus or another spread. Or try this recipe. It is such an All-American dish. It’s one of those comfort foods that’s actually kind of healthy (minus the cream sauce in the adult version, of course).
Chicken & Broccoli Casserole (15 Baby Serving)
1 Chicken Breast
1 Potato, peeled
1 Cup Broccoli, florets
2 Tbsp Cheddar Cheese
1. Place the chicken and potatoes in a steamer pot over boiling water
and cook for 5 minutes.
2. Add the broccoli and continue to steam another 3 minutes or until the
chicken is cooked through and the vegetables are fork tender.
3. Place all the ingredients in a food processor and puree until smooth
(or leave chunky for toddlers). You may need to add water from the
steamer pot to make smooth.
4. Cool and serve.

Poor baby. It was Kenya’s first Birthday and he got sick. I always thought that nursing him for a year would ward off all the viruses that seem to plague little ones. Nice try. Babies and kids get sick and there’s so little you can do to prevent it, but I’m always willing to give it a try.
He wasn’t feeling himself and I wanted to make sure that he had some food in his tummy to fight off whatever had gotten a hold of him. I’ve always read that chicken soup is the best thing to eat when your sick, so I tried to come up with something similar that would go down easy and that I could cook in a jiffy. He took one look at it and decided that he would open his mouth and give it a try. Within hours he was feeling better. Maybe it was the food, or maybe Mommy’s TLC. Whatever it was, he started to smile and feel better.
Chicken Soup for Babies Soul (10 baby servings, freeze 1/2)
1 Yukon Gold or Russet Potato, peeled and cubed
12 Baby Carrots
1 Chicken Breast
2 Tbsp White Cheddar Cheese, grated
1/4 Whole Milk or Water
1. Put chicken, carrots and potatoes in a steamer basket over boiling water.
2. Steam for 8 minutes or until all ingredients are cooked though and tender.
3. Place all ingredients in a food processor and blend until creamy. Add more liquid if needed from the water remaining in the pot.
5. Cool and serve.
