Veggie Casserole

A weelicious reader sent me the idea for this recipe and I absolutely love it! It's the perfect dish to make when all you have on hand are a few bags of frozen vegetables or a refrigerator full of cooked ones and want to create something fast and delicious that your kids will love. I used broccoli and corn because I too had several bags in the freezer, but you could also try peas, cauliflower, or any other combinations you love.

You can also toss this dish together in the morning, put it in the fridge and pop it into the oven that night. I love a one pot dinner that's so easy to pull off!

We used these to make this recipe:

Veggie Casserole  (Serves 6)

  • Prep Time:5 minutes,
  • Cook Time: 30 minutes,
  • Total Time: 35 minutes,

Ingredients

  • 1 tablespoon butter or olive oil, plus more for greasing casserole dish
  • 1 small onion, chopped
  • 1 cup milk
  • 2 eggs, whisked
  • 2 cups broccoli, cooked (can use frozen)
  • 1 cup corn, cooked (can use frozen)
  • 2 cups brown rice, cooked (whole foods and trader joe’s sell pre-cooked brown rice)
  • 1 cup cheddar cheese, grated

Preparation

  1. 1. Preheat oven the 350 degrees.
  2. 2. Heat the butter in a sauté pan over medium heat and cook the onions for 3-5 minutes or until soft.
  3. 3. In a bowl, whisk the eggs and milk until combined.
  4. 4. Add the onion, broccoli, corn, rice and cheese and stir to combine.
  5. 5. Grease in a casserole dish and pour in the mixture (I used a 9 x 9 inch pan).
  6. 6. Bake for 30-40 minutes, depending on the size of your casserole dish.
  7. 7. Serve.

    this is VERY good. I would cut back on the milk a little bit next time because mine was a little bit too liquidy. But it was still very good! I will also add more cheese next time.

    This is really delicious and so quick! And my 2.5 year old had thirds. Then my husband came home and I had to stop him from polishing off the whole casserole so we’d have lunch next day! Ill definitely be making this again with lots of different combos…leftover diced chicken, mushrooms, cauliflower, any veggie would be good! And FYI, I did not cook the broccoli before throwing it in the mix and it turned out perfect.

    This was a lifesaver for a side with friends coming unexpectedly and no chance to go to the grocery store. My baby, however, is allergic to egg. Today i just gave him the veggies with an extra infusion of cheese and made the grownup version with egg. Any suggestions so that i can make one dish for everyone to eat? Thanks!

    How can I add chicken to this?! Should I cook it first and then shred it and throw it in? Any advice would be great!

    can i use canned corn and if i use frozen veggies do i need to cook them first or just thaw them?

      fresh veggies are always better but you can use canned corn and just thaw the veggies if they are frozen :)

    btw this is a HUGE hit with my 17monther. she cant have enough. i used cream of corn instead of regular corn coz i know she cant really chew corn yet as she is still getting her molars. my hubby liked it too and ate half of it. have to make a bigger batch next time.

    Hi,

    I love all your recipes but I do not have an oven to bake them. Would appreciate if you could advice me any other method to try those oven version recipes. My kid is 2 years old and I’m very tired of cooking rice all the time. I would like to try your recipes. Are these recipes suitable for a two year old toddler?

      Do you have a Toaster Oven? You can try to cook it on low on top of your oven until it all comes together.
