I have been making Lazy BBQ Chicken for YEARS! To be honest, it's the best when I make it just for myself during lunch when everyone else is at school. (Shh don't tell!) It's a simple chicken breast marinated in my favorite BBQ sauce, then baked while I continue working. It is mostly hands off, easy to clean up, and I get a favorite meal in no time. 

I was making myself this favorite go-to lunch the other day and got to thinking about all the other easy marinades I could do in addition to BBQ sauce. I got to mixing and testing, and I came up with five more simple marinades.

Baked chicken cooks itself while you're busy doing all the other things you need to get done in a day. The marinades are quick to whip up, and can be done ahead of time. Is there anything better than a meal that can be prepped ahead and is hands-off during cooking?! As you can tell from the photos, you could even make each flavor of chicken at the same time! This can be useful for weekly meal prepping, or simply satisfying different tastes at the same time. 

Add a nice big salad and a fruity mocktail to make this a well-rounded and special dinner any day of the week. Now let's talk about these mouth-watering marinades!

Fresh Herbs - olive oil, lemon juice, and salt help to enhance the flavors of fresh cilantro and fresh parsley.

Jerk Chicken - Homemade jerk seasoning uses spices you already have in your pantry and adds TONS of flavor to chicken. 

BBQ - My old standby. Make your own BBQ Sauce or use your favorite bottled brand! 

Curry - Yogurt and curry powder are two classic ingredients in Indian cuisine and you will love them on chicken. 

Salsa Verde - Again, make your own salsa verde or use your favorite bottled brand. This would be amazing alongside some rice and black beans. 

Soy Ginger - This marinated chicken would definitely take your Chinese Chicken Salad up a few notches!

Marinated Chicken 6 Ways (2 chicken breasts)

Prep Time: 10 mins Cook Time: 30 mins

  • 2 boneless skinless chicken breasts
  • 1 recipe marinade per 2 chicken breasts


1. Preheat the oven to 350F.

2. In a bowl or ziplock bag, combine the marinade ingredients and mix well. 

3. Add the chicken and coat with the marinade. Allow to marinate for 15 minutes on the countertop, or overnight in the fridge. 

4. Bake the chicken for 30 minutes, or until cooked through. 

Marinade Recipes (use 1 marinade recipe for 2 chicken breasts)

Fresh Herb: 2 tablespoons olive oil, juice of ½ lemon, 1/2 teaspoon salt, 1 tablespoon chopped cilantro, 1 tablespoon chopped parsley

Jerk: 1 tablespoon olive oil, 1 tablespoon lime juice, 1 tablespoon brown sugar, 1 teaspoon garlic powder, 1/2 teaspoon dried thyme leaves, 1/2 teaspoon ground allspice, 1/4 teaspoon cinnamon, 1/4 teaspoon paprika, 1/4 teaspoon salt

BBQ: Use your favorite bottled brand

Curry Yogurt: 1/4 cup plain greek yogurt, 2 teaspoons curry powder, 2 teaspoons brown sugar, 1 teaspoon lemon juice, 1/2 teaspoon salt

Salsa Verde: 1/4 cup salsa verde, 1 tablespoon olive oil, 1/4 teaspoon salt

Soy Ginger: 2 tablespoons soy sauce, 1 tablespoon honey, 2 teaspoons sesame oil, 2 teaspoons minced ginger
