For kids, the excitement of the Fourth of July is often based on the most simple pleasures_ sparklers and fireworks (I didn't say all of these pleasures were entirely safe), any sort of water activity, big chunks of juicy watermelon, and basically anything edible that's red, white and blue. With so many things to check off on your holiday weekend to-do list, your barbecue dessert should be beyond easy and that's why I love these Watermelon Star Bites.
Since school let out for summer earlier this month I've taken a bit of a cooking vacation myself. Whatever I make, I want it to be really light, simple and fresh. Nothing meets all those requirements better or could be more refreshing than naturally bright red, juicy watermelon stars (red) topped with dollops of lightly sweetened whipped cream (white) and punctuated with blueberries (the blue, obviously).
Instead of turning on your oven and heating up the kitchen, just open your drawer and grab a festive star-shaped cookie cutter to pop out your bites. Then wash a big handful of blueberries (letting the kids munch on a few while they help you) and, of course, make your own homemade whipped cream.
Not only is this a truely fun cooking activity to do together with kids of most any age, but a dye-free solution for a magical Fourth of July dessert!
Watermelon Star Bites (makes about 24 pieces)
- 1 small seedless watermelon
- 1 cup heavy whipping cream
- 1 tablespoon powdered sugar
- 1/2 cup blueberries
1. Cut the watermelon into 1/2 inch thick slices, then use a star shaped cookie cutter to cut the slices into stars. Place the watermelon stars in a single layer on a tray, and place in the refrigerator while you make the whipped cream. (The whipped cream will stay on better if the watermelon is cold).
2. In the bowl of a standing mixer or with an electric mixer, combine the heavy cream and powdered sugar, and beat until light and fluffy, about 5 minutes.
3. Top each watermelon star with a dollop of the whipped cream, then add blueberries on top of the whipped cream.
4. Store in the fridge until ready to serve.
