Given how hectic everyday life is, how often do you find yourself giving your kids their breakfast in the car on the way to school? Plus I’d imagine on those days that you don’t even have the chance to feed yourself until an hour or so after you drop off the little ones.
According to the U.S. Census Bureau only half of all mothers eat breakfast with their preschoolers. I wasn’t aware of this sad statistic until I read the article accompanying the recipes I created for the Mom and Me Breakfast column in last month’s issue of Parents magazine — but I completely relate to it. Mornings can feel rushed and overwhelming even on the most average days.
Still, while trying to eat dinner together as a family is so important for children and their development, making the effort to congregate for breakfast can have equally profound effects. Instead of sitting around talking about how everyone’s day was, you have the opportunity to ask your kids open ended questions to help prepare them for what their day will be.
We’ve all heard time and time again to start every day with a balanced meal, doing that and satisfying each family member is easier said than done. That’s why I get such a kick out of this Happy Eggs recipe. I generally keep a bowl of hard boiled eggs in the fridge and always have lots of fruit at my fingertips, so this breakfast takes me less than 5 minutes to prepare — if you know how to boil, wash and slice, this one’s for you. Add a piece of whole grain toast on the side and you’ve got a balanced meal. Sure, you don’t need to have your meal in the form of a smiley face — a simple bowl of berries and sliced bananas will work just fine — but when your day starts with a smile isn’t it already that much better?
Happy Eggs
Ingredients
- 4 hard boiled eggs
- 4 small bananas
- 1 cup blueberries
- 1 cup raspberries
Instructions
- Peel the hard boiled eggs and slice them in half lengthwise. Place the eggs, yolk side up, at the top of a plate.
- Peel the bananas and place on the bottom of the plate to form a smiley mouth.
- Place 1 blueberry in the center of the plate, and 2 raspberries on either side to form a nose and rosy cheeks.
- Place the remaining berries in a bowl and serve.
- Note: You can serve the other banana, sliced, in a bowl with the berries for Mom with the hard boiled egg on the side.

Wow! This is perfect meal for breakfast and plus too catchy for a kid. Best to get his attention and make him eat. Thank you so much for sharing this idea. You just made my task easy.
Thanks for the idea! I made this for dinner. I gave our faces shredded carrots hair and buttered toast ears. We also had some leftover bowtie pasta my kids had fun using how they wanted.

Oh man, I am so guilty of this! Though I’m in the business of healthy eating too, I unload the dishwasher or make my coffee while my daughter eats breakfast. Thanks for revisiting this subject – gonna do it differently tomorrow morning!
Here you go! Peel them underwater and they’ll be easier to peel! http://b12.ba4.myftpupload.com/2010/09/08/the-perfect-hard-boiled-egg/
After boiling your eggs, submerge immediately in ice water for 5-10 minutes. This makes them easier to peel- even the fresh pastured eggs I buy.
If your hardboiled eggs are hard to peel, it probably has nothing to do with how you cooked them. I get my eggs super fresh, right from the source at a house down the street from us that has about a hundred or so chickens. She says, the fresher your eggs, the harder they will be to peel when you hard boil them. If you know you are going to be hard boiling your eggs and soon, pick the ones with closer expiration dates, if you get them fresh like me (and they are good for practically ever)put some aside in the fridge to age a little before you hard boil them.
What’s your recipe for hardboiled eggs? Mine always are really hard to peel.
