Happy Eggs

Given how hectic everyday life is, how often do you find yourself giving your kids their breakfast in the car on the way to school? Plus I'd imagine on those days that you don't even have the chance to feed yourself until an hour or so after you drop off the little ones.

According to the U.S. Census Bureau only half of all mothers eat breakfast with their preschoolers. I wasn't aware of this sad statistic until I read the article accompanying the recipes I created for the Mom and Me Breakfast column in last month's issue of Parents magazine -- but I completely relate to it. Mornings can feel rushed and overwhelming even on the most average days.

Still, while trying to eat dinner together as a family is so important for children and their development, making the effort to congregate for breakfast can have equally profound effects. Instead of sitting around talking about how everyone's day was, you have the opportunity to ask your kids open ended questions to help prepare them for what their day will be.

We've all heard time and time again to start every day with a balanced meal, doing that and satisfying each family member is easier said than done. That's why I get such a kick out of this Happy Eggs recipe. I generally keep a bowl of hard boiled eggs in the fridge and always have lots of fruit at my fingertips, so this breakfast takes me less than 5 minutes to prepare -- if you know how to boil, wash and slice, this one's for you. Add a piece of whole grain toast on the side and you've got a balanced meal. Sure, you don't need to have your meal in the form of a smiley face -- a simple bowl of berries and sliced bananas will work just fine -- but when your day starts with a smile isn't it already that much better?

Happy Eggs (serves 4)

  • 4 hard boiled eggs
  • 4 small bananas
  • 1 cup blueberries
  • 1 cup raspberries


1. Peel the hard boiled eggs and slice them in half lengthwise. Place the eggs, yolk side up, at the top of a plate.

2. Peel the bananas and place on the bottom of the plate to form a smiley mouth.

3. Place 1 blueberry in the center of the plate, and 2 raspberries on either side to form a nose and rosy cheeks.

4. Place the remaining berries in a bowl and serve.

Note: You can serve the other banana, sliced, in a bowl with the berries for Mom with the hard boiled egg on the side.
