Halloween Lunch Trader Joe’s style! 

Anyone else obsessed with pumpkin + fall inspired goodies? Here’s what’s inside: pumpkin shaped pasta with pumpkin cardamom sauce, apple mummies, jack-o-lantern sweet potato chips, caramel corn + a pumpkin chocolate. It’s a sweeter lunch than I usually send, but it’s a special time! The pumpkin sweet potatoes chips are super easy to make and such a healthy treat!

Trader Joe's Halloween Lunch

Ingredients  

  • 1 sweet potato
  • cooking oil spray
  • kosher or sea salt

Instructions 

  • Preheat the oven to 400F degrees. 
  • Slice the sweet potato into 1/3 inch slices. Using a paring knife, cut jack-o-lantern faces into the sweet potatoes.
  • Place the sweet potato slices on a parchment lined baking sheet, spray with oil, sprinkle with salt and bake for 20 minutes (alternatively they can be cooked in an airfryer for 10 minutes at 350 degrees).
