Sunny Side Up Veggie Burger

One of the best parts about watching my kids get older and blossom is their evolving love of food and their choices in what they want to eat. Kenya is a perfect example of this fact. He’s been a vegetarian since he was little, but the way he eats, picking the foods that go in his body and his desire to cook for himself is always evolving. One of the foods that he loves most are eggs. We were at Panera a few months ago and Kenya discovered their scrumptious egg sandwiches. He devoured their egg and cheese sandwich, but weeks later when he decided to recreate one of his favorite sandwiches, he decided to take it up a notch and make a vegan burger with a sunny side up egg.  

I decided to dive in a little deeper to learn more about Panera’s inspirational Food Interrupted series. Each episode follows leaders in the food world as they meet everyday heroes who have dedicated their lives to changing America’s food system.

In the fourth episode, “Eggs Interrupted,” we learned that U.S. restaurant chains can use up to 16 ingredients including artificial additives! How crazy (and gross) is that!? What I love about partnering with Panera on this post is that we share the same values. An egg is an egg and should be enjoyed in that way with only one simple ingredient: egg!

If you’re a vegetarian (or not), you have to try this sandwich. We buy a variety of vegan burgers, top them with a golden egg that oozes all over the burger when you take a bite creating a luscious sauce. If you really want to take it up a notch, you can even give it a squirt of ketchup, mustard or even a sprinkle of cheese. If you have other suggestions toss them out in the comments below!

Sunny Side Up Veggie Burger (1 burger)

Prep Time: 10 mins Cook Time: 5 mins

Ingredients

  • 1 plant-based burger patty (recipe ideas below)
  • 1 teaspoon butter or oil
  • 1 large egg
  • 1 hamburger bun

Preparation

1. Cook burger patty according to package directions, or start with one of the recipes linked below.

2. Heat a small saute pan over medium heat, add butter or oil and crack the egg into the pan. Allow to cook for 3-4 minutes or until the yolk is golden and the egg white is cooked through.

3. Place the burger on the bottom bun, top with the egg and remaining bun. 

Accompaniments

sliced avocado, ketchup, mustard, mayonnaise, pickles, tomatoes, lettuce

    Behold I was in a very bad shape when I lost my boyfriend. We were supposed to get married and everything got cancelled which was my fault. He broke up with me because he was a good guy who I treated wrong and didn’t appreciate.
