Today I met a weelicious mom with two beautiful 15 month-old twin boys. She is fairly new to the site and asked me to recommend some past weelicious recipes that her kids might enjoy. Baby Frittatas were the first thing that came to mind. We’re observing President’s Day at my house, but since I was inspired today, I thought I’d post this “oldie” but goodie. Enjoy the holiday and eat well!

Baby Frittatas

Ingredients  

  • 3 large eggs
  • 2 tablespoons milk
  • 2 tablesoons parmesan cheese, grated
  • 1/4 cup asparagus, diced
  • 3 sun dried tomatoes, packed in oil and diced

Instructions 

  • Preheat the oven 375 degrees.
  • Spray or grease mini muffin tins with oil or butter.
  • Whisk the eggs and milk together. Add the cheese, tomatoes and
    vegetables.
  • Add a heaping tablespoon of egg/vegetable mixture to each muffin cup.
  • Bake for 12-14 minutes.
  • Cool and serve.

  2. Finally just discovered these! Used tomatoes and peas and cheddar, because that’s what I had in the fridge. PERFECT base recipe. Couldn’t be easier, and good finger food to make ahead and send to daycare with my 14 month old.

  5. Yes you can, but the only difference would be the cooking time. I would cook them for another 5-7 minutes depending on your oven.

  6. I’ve been trying to get my 14 month old to eat eggs since she was 12 months to no avail. I’ve tried making eggs a dozen different ways and was about to give up when lo and behold I found this recipe. O.M.G. did she love these! I wish there was a word that could adequately describe how yummy she thought these were, she snarfed them up as soon as they were cool enough for her to handle and ate 2 whole frittas all on her own. Thank you for sharing this recipe!

    Any idea how long they’ll last in tupperware in the fridge?

    And is 12 months still the cut-off for egg whites?
