I can’t believe we’re almost back to school! We’ve had one of the best summers I can remember, so I’m almost dreading the back to school routine and rhythm. The only thing that can get us out of the back to school blues, is back to school shopping! Every year my mother in law and I take the kids to J Crew and let them pick out special pieces to fit their unique personalities and this year they even have lunch boxes! I wish I could replay the squeal that Chloe let out when she saw them! Not only are the prints fun and creative, but they’re also insulated and the perfect vessel for school lunches. 

I want the kids first day back to school to be extra special, so I’m sending them with a few of their favorite foods that also happen to be bright, fun, nutritious and really easy for me to whip up

Single fruits are delicious on their own, but have you ever tried a Rainbow Fruit Kabob? You can vary the fruits by the season letting your kids pick out ones they love most and then ask them to help you skewer each one. Cooking is always better when it’s together!

Tired of another ho hum sandwich? Have you ever tried “Sushi” Sandwiches? Total lunch box game changers! You can use a variety of fillings like hummus and grated carrots, peanut butter and jelly or even whipped cream cheese and olive tapenade. Open your fridge and I bet you have a kid friendly spread just waiting for you.  

I’m all about a dish when it’s deconstructed in some way and it’s especially true when it comes to eating a sandwich. By making a Sandwich on a Stick you can basically take any bread and fillings from cheese to turkey, ham, cherry tomatoes or cucumbers and start stacking them. Not only are they visually appealing, but an out of the box way to switch things up.
