My kids constantly ask me for pancakes before school in the morning. However I've found that most quick-and-easy box mixes are loaded with unnecessary and unwanted ingredients while the better made brands are pretty expensive. I don't have the time to make pancakes from scratch on weekends, let alone during the week, so I took it upon myself a few years ago to create my own homemade, healthy, quick-and-easy whole wheat pancake mix. I keep a big batch of it in a big, oversized, air-tight glass container in my pantry to keep it dry and fresh, and whenever I get that last minute request for pancakes all I need to grab is some milk and an egg to make my little ones happy.

When I want to add a little bit of extra love to my flapjacks, I add a sliced strawberry in the shape of a heart in the middle of each one. It may seem like no big deal, but it tends to have an affect on my family. Luckily no fancy knife skills are required because after you stem a strawberry and then slice it lengthwise, it naturally looks like a heart. Can you think of anything better to serve up for your kids or loved one on Valentine's Day morning than this?

Valentine Strawberry Heart Pancakes (makes 15 pancakes)

Prep Time: 5 mins Cook Time: 5 mins

Ingredients

  • 1 large egg
  • 1 cup Buttermilk
  • 1 tablespoon Vegetable or Canola Oil
  • 1 cup white whole wheat flour
  • 1 tablespoon Sugar
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Baking Soda
  • 1/4 teaspoon Salt
  • 6 large strawberries, cored, sliced lengthwise into 4-5 pieces to resemble hearts

Preparation

1. Whisk the egg, buttermilk and oil in a large bowl.

2. In a separate bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.

3. Mix the dry ingredients into the wet ingredients until just combined.

4. Heat a large pan or griddle over medium heat and grease with butter or oil.

5. Pour about 2 tablespoons of the pancake mixture onto the griddle, gently press a strawberry slice onto the top and cook for 2 minutes.

6. Flip the pancakes and cook an additional 1-2 minutes.



Note: If you do not have buttermilk you can make it by adding 1 tablespoon vinegar or lemon juice to 1 cup of milk. This mix also works beautifully with any type of milk you prefer!

    I love your whole wheat pancake mix - and so does my 3 year old daughter! I keep a big stash of it in the pantry and we make pancakes together on the weekends... then freeze so she can eat them during the week. And I made these pancakes for my fiance and he didn't even know they were whole wheat until I told him.

    Hi. I make a double batch and make a lot at once. I cool them, wrap indivually in wax paper and freeze in a large zip loc bag. When my kids want pancakes, I zap one in the microwave for about 20 seconds and it's ready to go! Freeze method works great with waffles - but I don't microwave them, I put them in toaster.

    I will be making your strawberry pancakes this year! I made the beet juice ones last Valentine's Day. Yummy!

      To make it dairy I would substitute 1/2 of a banana for 1 egg and use soy or almond milk. You can use the same tip at the bottom to make it like buttermilk.

    I noticed in some of your recipes you use canola oil and vegetable oil. Do you use these oils often? I'm trying to stay away from GMOs but find it somewhat difficult cause they are in so many things my family loves.

      I use canola oil frequently. I buy mine from Trader Joe's as it is GMO free! Another brand that is GMO free is Spectrum. I find that at higher end grocery stores and online!

    I made these this morning and Im seriously never buying boxed mix again. My 3 year old daughter just loves pancakes and asks for them just about every day. She was eating them faster then I was making them :) I changed the recipe up a bit though. I omit the sugar and used a tbsp of pure maple syrup and added pure vanilla extract. We made raspberry and blueberry ones too, but the strawberry ones were the prettiest. Thank you ;)

    I like these except for the baking soda I don't understand why you are using it most pancake recipes just use baking powder I don't like the baking soda taste and I used he 1/2 tsp like it says it just leaves a funny feeling in my mouth but they are very yummy love the strawberry idea will make these again with no baking soda
