I still can’t believe my kids are going back to school this week. It has been one of the best summers I’ve ever had getting to travel with them at this amazing age. We started the summer in the Turks and Caicos for a much needed family vacation for two weeks. Then I headed to farm camp at Blue Hill in New York with my parents and the kids where I also appeared on the Today Show in a segment about work life balance (is there such a thing?!) and an appearance on The View for a Back to School Lunch segment.

When back in Los Angeles I got to celebrate my baby shower with dear girlfriends enjoying snacks, blessings and the most incredibly relaxing afternoon being taken care of by incredible women. There were endless family dinners with my parents, in laws and the kids, weeks of fun camps the kids attended (and the lunches I packed for them), the last days of pregnancy indulging on cupcakes to the birth of our baby girl.

After living in my baby bubble for the past few weeks, it’s time to head back to school and get in our new weekly rhythm. Every year I try to come up with a list of new recipes for school lunch and these Turkey Cucumber Roll-Ups are a sure fire winner. Since there’s no bread in them you can offer them to gluten-free kids as well. With just a slice of turkey rolled up with cream cheese and cucumber slices they’re simple to prepare, travel well inside a lunch box and are easy finger food for busy eaters. Serve them with a wheel of Mini Babybel cheese, some strawberries, olives and trail mix and you’ve got a delicious meal!

Turkey Cucumber Roll Ups

Ingredients  

  • 2 persian cucumbers
  • whipped cream cheese
  • turkey deli meat

Instructions 

  • Cut the cucumbers into sticks.
  • Spread cream cheese on the deli meat, place the cucumber sticks in the center, and roll up like a burrito.
  • Slice in half and serve.

    What storage containers are using for this? I made this for my kids on Friday school lunch and they loved it. Thank you

  2. a better choice is real cheese instead of processed and watch the “deli” meat ( nitrates and sodium) I will use avocado instead of the whipped cream cheese 🙂
