The pineapple keeps the cake incredibly moist and gives it a little extra zip and zing. You can use canned pineapple, but I highly recommend fresh as there’s such a difference in flavor and freshness. My mother liked to cook her carrot cake in 3-8 inch pans, but for Chloe’s birthday party last year I made her this Pineapple Carrot Cake in a 13 x 9 inch pan. Not only is it easier to prepare, but simple to cut and serve to a crowd.
