Chloe has been on a picnic rampage lately! Everyday when she’s come home from school over the past few weeks she’s taken her snack and said “wouldn’t this be better on a picnic” (hint hint 😉

The constant picnic reminder got me thinking about the ultimate foods to eat outside in the summer. Pizza’s a total no brainer and a big bowl of watermelon always puts smiles all over my kids faces, so put them together and you’ve got Watermelon Pizza! It’s the pinnacle of euphoria for hungry kids to snack on.

There are plenty of ways to eat watermelon, but in wedges tends to be the most popular in our house. Let’s kick it up a notch! What if you put out bowls of other fresh fruits like raspberries, blueberries, pomegranate seeds and more and let everyone decorate their own “crust” of watermelon pizza?!

Don’t stop there, though. You have to use tons of “cheese”. Not real cheese, although, feta could be an interesting idea. I like to take macadamia nuts and chop them up. Another fun mozzarella imposter is unsweetened coconut and on top of the sweet and juicy watermelon the combo is absolute heaven.

Ingredients  

  • 1 large watermelon
  • unsweetened coconut flakes
  • chopped macadamia nuts
  • kiwi slices
  • strawberries, halved
  • blueberries, halved
  • raspberries, halved
  • blackberries, halved
  • pomegranate seeds
  • cherries, halved

Instructions 

  • Cut the watermelon into 1 inch slices. You can leave them in discs, or cut into pizza wedges. 
  • Sprinkle the watermelon slices with shredded coconut, chopped macadamias, or a mixture of the top. 
  • Top with all your favorite fresh fruit toppings: kiwi, berries, pomegranate seeds, cherries... the sky is the limit!
