Grilled Two-Cheese Avocado Sammie

May 19, 2010

When Kenya see's avocado or cheese in his school lunch, he immediately gets excited. There's nothing like these 2 nutritious creamy foods melted between crusty bread to keep a kid sated all day long. If you're looking for a school lunch recipe, I would give this idea a shot!

Grilled Two-Cheese Avocado Sammie  (Serves 2)

  • Prep Time:1 minutes,
  • Cook Time: 4 minutes,
  • Total Time: 5 minutes,

Ingredients

  • 4 slices sourdough bread
  • 2 slices cheddar cheese
  • 1/2 avocado, sliced
  • 2 slices gruyere or provolone cheese
  • 1 tablespoon butter, softened

Preparation

  1. 1. Lightly spread one side of all bread slices with butter.
  2. 2. Place one slice of bread on a plate, butterside down, and cover with 1 slice of cheddar, half of the avocado slices ( I mash them down a bit) and finally, a slice of gruyere or provolone cheese.
  3. 3. Top with the remaining piece of bread, butterside up.
  4. 4. Preheat a panini maker or saute pan over medium heat and cook the sandwiches until the bread is golden and the cheese is melted, about 4 minutes.
  5. 5. Cut and serve.

I just tried one – used shredded cheddar cheese & onion with the avocado. It was yummy!

Does it bother him if the avocado oxidizes and is a bit brown? I suppose tossing it with a bit of lemon juice would help that issue, but not sure if it would change the flavour too much.

I’m confused by this as a lunch recipe. Do you prepare this in the morning and then put in his lunch box to eat cold? Sounds yummy, but not sure how it would hold up in a refrigerator for 3 hours. Thanks.

Yes I do, Kenya eats his lunch at room temperature. I put a cold ice pack in it as well.
