Summer is winding down, so I'm trying to get all the last juicy bits of the summer produce I love! Peaches, watermelon, and corn are all making regular appearances at our meals these days. Juicy tomatoes and fragrant basil are right up there in the running for favorite summer produce around here, and who doesn't love a fresh caprese salad?!

I've been wrapping up this classic dish in a spinach tortilla wrap and adding homemade pesto for a colorful end-of-summer lunch by the pool. You can bet I'll be adding these to school lunch, too, as long as I can get my hands on this beautiful produce. Caprese Wraps are a delicious and eye-appealing addition to school or office lunches, and will keep you feeling warm and summery even once you're back to the grind of long school days and afternoon homework.
