Caprese Wraps have all of summer’s freshest produce perfectly wrapped up. It can’t get any easier. They make a perfect lunch, snack or appetizer for a backyard summer BBQ!
Summer is in full swing, so I’m trying to get all the juicy bits of the summer produce I love! Fresh peaches, watermelon, and corn are all making regular appearances at our meals these days. Juicy tomatoes and fragrant basil are right up there in the running for favorite summer produce around here, and who doesn’t love a fresh caprese salad?! There isn’t a better combination than fresh mozzarella, tomatoes and basil.Â
I’ve been wrapping up this classic dish in a spinach tortilla wrap and adding homemade pesto for a colorful end-of-summer lunch by the pool. You can bet I’ll be adding these to school lunch, too, as long as I can get my hands on this beautiful produce. Caprese Wraps are a delicious and eye-appealing addition to school or office lunches, and will keep you feeling warm and summery even once you’re back to the grind of long school days and afternoon homework. But for now, serve these at your next pool party or park hang!
I love making wraps because they’re super easy and you can add whatever you want to them. If you wanted to make these a little heartier you could add some chicken or avocado and it’s super delicious. Caprese Wrap
Ingredients
- 2 spinach wraps
- 2 tablespoons pesto
- 1/2 cup cherry tomatoes, chopped
- 1/2 cup mozzarella, shredded or chopped
Instructions
- Lay a spinach wrap on a flat surface in front of you and spread with 1 tablespoon pesto.
- Sprinkle 1/4 cup chopped cherry tomatoes and 1/4 cup shredded or cubed mozzarella cheese all over the spinach wrap.
- Wrap up like a burrito and slice into coins.
