Maple Soy Salmon

At least once a week (usually on Sundays or Mondays), I make salmon for dinner. Knowing that salmon is packed with Omega-3 fatty acids, which help a little one’s brain development, has always inspired me to keep it in our regular mealtime rotation.

Salmon is full of flavor and has a firm texture which most kids love, so I like to keep it basic and not jazz it up too much with sauces. However, I find that a quick marinade made with soy sauce, O.J. and a touch of maple syrup creates a light, sweet glaze that my kids adore. It's amazing how adding just a little extra love in the form of a few everyday ingredients can turn a simple food into something extraordinary that's good for you, too!

Maple Soy Salmon  (Serves 4)

  • Prep Time:30 minutes,
  • Cook Time: 8 minutes,
  • Total Time: 38 minutes,

Ingredients

  • 2 tablespoons low sodium soy sauce
  • 2 tablespoons maple syrup
  • 2 tablespoons orange juice
  • 1 pound salmon fillets, cut into 4 even pieces

Preparation

  1. 1. Place the soy sauce, maple syrup and orange juice in a large bowl. Stir to combine.
  2. 2. Place the salmon fillets in the mixture, cover and marinate in the refrigerator for 20-30 minutes.
  3. 3. Place rack in the middle of the oven and preheat broiler.
  4. 4. Place the salmon fillets skin side down on a foil-lined baking sheet and broil for about 8 minutes (make sure to keep an eye on them so they don’t burn).
  5. 5. Serve.

    Just wanted to say thanks for all of these amazing recipes. We make this Maple Soy Salmon all the time, my kids LOVE it! Same with your turkey pesto meatballs. My 5 year old is a super picky eater too, so it’s nice to have found some super easy and healthy recipes that she gobbles right up!

    My 4 yr-old twins LOVE salmon and so do we. What’s not to love? HOT TIP: There’s an amazing fish shop in Berkeley, CA called the Tokyo Fish Market. It’s a hidden treasure and has THE best fish selection (5 or 6 different kinds of salmon) I have ever seen. They have a lot of sushi grade fish there as well. I usually marinate it for an hour in soy sauce, garlic and olive oil with a little salt and pepper. I grill or broil it and it gets nice and crispy on the outside and moist and flavorful on the inside. My kids will eat it hot or cold the next day. It’s so good for you and such a tremendous source of protein.

    This sounds so tasty! What did you serve as a side dish? Soy beans and rice balls? If you indeed used soy beans, how did you prepare them?

      We have soybeans as a staple in our house. I buy them in the frozen section at the store…They are preshelled which makes it easier on mom and kiddo. For Me I add a little salt but for Collin I just serve them plain and he loves them.

      I buy my salmon at farmer’s market or at costco. They will seasonally have wild caught filets. But I also keep a bag of frozen wild caught salmon in the freezer.

    My oven has a high and low setting for the broiler. Which one would you recommend? I would love to start incorporating fish into our diets, but I have no idea how to cook it. This is a good start…thanks!

      Another way to cook salmon that I just recently tried is to steam it just like you would vegetables. I have a moroccan steamed salmon recipe I’ve been making that I really like. There is a sauce you make to put on the salmon after it is steamed. It turns out really good and it’s simple. My toddler doesn’t like the sauce that goes with it but he does eat it plain.

      I would use the high setting and set the fish on the lower or middle rack of the oven and watch it so it does not burn the top.
