I'm so excited to announce the launch of the Good Bite Weeknight Meals Cookbook. I along with a few of my favorite food bloggers contributed recipes that appear throughout the book. It's packed with super easy meals that you can pull off during the week whether you're a beginner or a gourmet chef.

    As a Phoenix resident, I am excited that it’s finally cooling off enough to use the oven. I am excited to cook cornish game hens with a molasses glaze, pumpkin bread, a new pesto lasagna recipe and a chocolate cake :-)

    I am so excited to win this book. My son loves new foods. He loves asparagus, zucchini, squash, avocado and so much more. I want to make some kind of winter stew. When it gets cold there is nothing better than stocking up on fresh organic veggies and making a long slow cooked stew. I really hope to win this book.     Stuffed roasted butternut squash! Loving the cooler temps, and being able to throw something in the oven to roast. Put stuffing in half a butternut squash, cover with foil, and roast! Voila, 45 min later you have a warm, delicious vegetarian meal that is quick and healthy.

    Although it is still 88 degrees here in Central Florida, we feel like Fall has arrived (it was 95 degrees). I am now making pumpkin everything – pumpkin oatmeal, pumpkin waffles, pumpkin whole wheat pancakes, pumpkin muffins, pumpkin shakes… I even want to try a vegan black bean pumpkin soup I saw. We love pumpkin!

    I love cooking in the fall! The flavors seem so much more robust to me. I enjoy cooking squashes, root vegetables, and (new to me since last year) pumpkin! So easy…

    I love to utilize pumpkin on my fall dishes especially Molasses Pumpkin Bread that is a tradition for us. We also love soups. They are so nourishing. You could puree vegetables and they kids don’t even know it.

    I love all the comfort of Fall foods. Our family picked apples last week. This weekend we are headed to a pick your own pumpkin patch. There will be a sorts of squash, sugar pumpkins, and carving pumpkins. I’ ve had an idea to take my recipe for butternut squash soup and replace it with pumpkin and curry spice.

    I’m very excited to make this Moroccan chicken which seems to be a much simpler version than I made from Bon Appetit a few years ago! This fall I’m focusing on soups – potato (with Applegate turkey bacon), butternut squash (always looking for the BEST recipe for this), and lentil to name a few. Soups are healthy as it’s easy to add vegetables.

    Canadian Thanksgiving on Monday so it’s turkey for us – non-traditional in that we are deep-frying it but still sharing with friends and family. :) I’ve already been baking lots of apple pies and pumpkin everything since it is cold here already!

    Soup! I would eat it year round but my husband doesn’t like soup all that much- especially if it is a warm day. So on cold days he will sometimes make an exception! Can’t wait for it to get cold here in California!!!
