Vanilla Cupcakes in a Cone and Cookbook Giveaway!

Seriously? An ice cream cone filled with light vanilla cake and topped with frosting? I can think of few things that would make a kid more happy than this treat. It's like if two members of dessert royalty got married and had babies -- the result would be these Vanilla Cupcakes in a Cone. My kids lost their minds when they got to make them with me. Where, you may ask, did this ingenious idea (which I wish I had thought of) come from?

Recently I got a copy of the new Handstand Kids cookbook, Baking Around the World, and told Kenya and Chloe that they could pick out any recipe they wanted for us to bake together. They were over the moon. Both of my kids are huge fans of the Handstand Kids and so we poured through the book together looking for a recipe while the kids talked about their favorite HK characters and looked at the cute illustrations of them throughout the book. I was getting excited myself, reading recipe names like Indian Biscuits, Raspberry Rugelach Twists, Traditional Mexican Chocolate Cake and Red Velvet Beet Cupcakes (my own little contribution to the book!) which all sounded good to the kids, but when I suggested Vanilla Cupcakes in a Cone, they were sold.

Even better, this recipe is so simple that Kenya and Chloe were able to do everything short of putting them in and pulling them out of the oven. When the cupcake cones were cooled and frosted we had a little birthday party celebration for our friend, Nilva. You should have seen the smiles on their faces and total empowerment they experienced carrying the cones with candles over to her while recounting how they had made them on their own.

Recipe From Handstand Kids Baking Around The World

Vanilla Cupcakes in a Cone  (12)

Ingredients

  • 1 1/2 cups all purpose flour
  • 1 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1/4 cup unsweetened applesauce
  • 1/4 cup low fat milk
  • 12 ice cream cones with flat bottoms (also known as cake cones)
  • butter cream frosting:
  • 1/2 cup cream cheese, softened at room temperature
  • 4 tablespoons butter, softened at room temperature
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract

Preparation

  1. 1. Preheat oven to 350° F.
  2. 2. In a bowl, whisk together the flour, baking powder, and salt.
  3. 3. In the bowl of a standing mixer, or using an electric hand mixer, beat the butter and sugar for about 2 minutes, or until light and fluffy.
  4. 4. Add eggs, one at a time, then the vanilla mixing to combine.
  5. 5. Slowly add half of the flour mixture and then some of the milk and apple sauce until just combined. Then add the remaining flour, milk and apple sauce, scraping down the sides of the bowl with a rubber spatula and beat until just combined.
  6. 6. Pour the batter into the ice cream cones, filling them just to the top of the cone. Place on a baking sheet and carefully place in the oven.
  7. 7. Bake for 20-25 minutes, or until the cake springs back when lightly pressed.
  8. 8. Allow to cool for 15 minutes before frosting.
  9. Butter Cream Frosting - Makes about 1 cup
  10. 1. Place the cream cheese and butter in a bowl and beat with an electric mixer for 30 seconds.
  11. 2. Add the powdered sugar and vanilla and beat for 1 minute, or until frosting is smooth and creamy.
  12. 3. Spread the frosting on the cupcakes, decorate, and serve.

    Salmon- I do this 1x week. Marinade of soy, brown sugar, rice vinegar and Dijon. Bake it. Then I use leftovers for me and use it as a salmon spread on my bagels, also use leftovers for my toddler and put the salmon together with whole milk yogurt and veggies, or over rice. Amazing how versatile this dish is! And it only takes 5 minutes to prep, 30 to bake and 1 week to devour!

    We bake everything and anything at our house but lately I have been on a mini-pancake muffin kick with bacon or fruit. Everyone loves it for a quick breakfast and I love that I know exactly what is going into their bellies!!!

    i love to bake sunrise muffins from you can trust a skinny cook. you puree a whole orange in the blender with your other wet ingredients to yield a moist, vibrant citrus muffin. only way i can get my oldest child to eat oranges.

    Anything on Weelicious!! Ok, kidding aside, I currently (I say this b/c I frequently change my baking faves) am madly in love with my Chocolate Chip Scone recipe!! It’s funny b/c I do not like scones from Starbucks, grocery stores, etc, but this recipe in particular is RIDICULOUS!! It’s to the point where I make the dough twice a month, and store the raw scones in the freezer individually wrapped so that they are fresh backed and ready in under 15 minutes whenever we are craving them!!

    To me there’s nothing better than a crusty loaf of bread hot out of the oven with butter melting on it, except for the smell of fresh bread baking! I use Jim Lahey’s easy bread recipe that’s done in a super hot oven in a heavy enameled cast-iron pot (like a Le Creuset). I’ve never been able to make bakery-style bread like this before. It’s truly easy and incredible. Impress your family and friends and try it today!!!

    My absolute favourite thing to bake is apple crisp! I love making any kind, last weekend we made apple and strawberry, I love apple and cranberry or apple and peaches! So versatile, I can control the sugar content and it has so much fruit to it I don’t mind my daughter having some!

    Fruit cookie pizza! Kids LOVE to help, it is quick, easy and delicious. AND it is one of the only ways I can get them excited about eating berries, which is a major bonus!

    Currently, I love making muffins of any type. I am addicted to my mini-muffin pan because they are easier for my 20 month old twins to eat. In the summer I love making fresh fruit muffins and cobblers.

    By far my favorite thing to bake is peanut butter cookies. I have my grandmas recipe and I love it. Also I like to bake meltaway cookies, they’re super easy but the downside is they don’t last long! :)

    I wanted to thank you for sharing this because I hadn’t heard of Handstand Kids before and I think it’s great that there is a little girl in a wheel chair. I have a disabled three year old so she loves it when we find things with kids like her!

    My so has gluten and dairy allergies, so I have tried many things, some turned out good, some not so good lol So far our favorite is a vanilla cupcake with blueberries, banana and avacado, sometimes we add rasberries or sweet potato! We both love them and when we can get my husband to try he likes them too :)

    I just love baking so my favorite thing rotates pretty much monthly. Right now, I’m on a coconut flour kick so I’m experimenting with recipes where I can substitute my usual white whole wheat with coconut. The most recent creation was a banana-coconut bread muffin. They were deeeelish!

    i like to bake white chocolate chip oatmeal craisin cookies, made with whole wheat flour they end up turning into a hybrid scone. Delicious and a bit healthier. =)

    We love to bake brownies. We bake on weekends and the kids always enjoy it very much. Brownies do not last very long. They are delicious. Yum!

    I love making fruit crumbles in the summer. We have a lovely Pick-Your-Own farm nearby and whatever fruit we pick gets turned into a lovely crumble. Sour Cherries are coming up soon :)

    My favorite thing to bake is an apple swirl cake with homemade whipped cream and cream cheese frosting. I make it for both of my daughters at thier birthdays. This cake is a huge hit whenever I make it.

    I remember as a kids some of my friends would bring in cupcakes in a cone and i thought they were sooo cool. With my son’s birthday coming up i was actually looking for a recipe however everything i could find called for box cake mix which i didn’t want to use.     Bread! I am a bread making machine….I do a weekly sourdough loaf, have just started doing a whole wheat sandwich bread, my hubby and I learned how to do baguettes, and I’ve even done bagels. I also love to make muffins and cupcakes….in fact just this week I learned how to make my own baking powder so I could create muffins with a bunch of leftover goodies. Baking is in my blood, my mom had a home bakery business for years!

    I love baking apple oatmeal muffins.

    I had forgotten about cupcakes in a cone, I’m going to make them for my daughter this weekend. When I was growing up my mother made them for every single birthday, bake sale, and scout meeting. My mom used to stand them up in loaf pans for baking – they wouldn’t stay put on a baking sheet – and she’d pack them up in foil lined shoe boxes for transport.

    Banana walnut bread…..1 loaf lasts about 24 hours in my house…..and only 2 of us eat it!
