Ingredients

  • 3 cups mixed vegetables, cut into 1-inch pieces (cauliflower, broccoli, squash, carrots, beets, etc)
  • 1 tablespoon olive oil
  • 1/2 teaspoon kosher salt

Preparation

1. Place the vegetables in a bowl and toss to coat with the oil and salt.

2. Place the vegetables in the air fryer basket and cook on 375F degrees for 15-20 minutes or until golden and fork tender.
