When we have a party with a big group I almost always make a big platter of Greek or Healthy Nachos. As much as I adore chips and gobs of sauce and melted cheese on top, we tend to pay for it later feeling heavy and weighed down. When I started thinking about vegetable inspired recipe ideas for Bolthouse Farms UnBake Sale I realized that you don’t have to have chips with all the amazing array of toppings in traditional nachos, why not make your own All Veggie Nachos. You could still include a handful of grated cheese for flavor and make a luscious topping of plain greek yogurt with lime. The bulk of the dipping comes from bright bell peppers cut into triangles and all of our other favorite toppings like cubed cucumbers, avocado cubes for a nutrient boost and cherry tomatoes to pick up in every bite.
Just look at how gorgeous the finished product turns out. Can you imagine how everyone would grab at plates of these at your own UnBake Sale? Just the fact that you can eat them the same way you would feast on the nachos you’ve been making for years makes them a big time winner. All Veggie Nachos
Ingredients
- 3 bell peppers, seeded and cut into triangles
- 1/4 cup light sour cream
- 1 teaspoon lime juice
- 1 persian cucumber, diced
- 1/2 cup quartered cherry tomatoes
- 1/2 avocado, pitted
- 3 tablespoons grated mexican blend cheese
Instructions
- Place the bell pepper “chips” on a plate.
- Whisk the sour cream and lime juice in a small bowl.
- Drizzle the bell pepper “chips” with sour cream sauce and the remaining ingredients to form veggie nachos.
