Green Mac and Cheese Video

Seven years ago when I found out that I was pregnant with Chloe and her due date was March 17th I had a mix of absolute excitement and joy and absolute dread. Would this sweet little girl have to celebrate her birthday till the end of time on St Patrick’s Day with green beer? Luckily I was a week late, but in those 10 months when you let your thoughts wander I also worked on as many naturally green recipes as possible in hopes of us enjoying foods without green food coloring. I know it sounds silly, but I had my crazy pants strapped on tight ;)

Bright Green SmoothiesCheesy Green Hummus and Creamy Lime Parfaits are a few favorites, but it you want a recipe that’s a guaranteed kid pleaser you need to watch this Green Mac and Cheese Video. It’s one of those recipes that’s a crowd pleaser, gets a boost of green from a ton of nutritious veggies and also makes you want to celebrate with the Irish. I even made it with my friends at the Chew on ABC which you can see here.

You don’t have to be a gourmet chef to make this Green Mac and Cheese either. It’s a classic mac and cheese recipe mixed with peas, broccoli and spinach whizzed into the creamy sauce making it into any of your favorite shapes of pasta. 

If you have any school events celebrating St Patrick’s Day this will be a fun one to whip up for everyone. For anyone having a baby around St Patrick’s Day you won’t ever have to fear green beer again!

Green Mac and Cheese Video

  • 1 pound elbow macaroni (you can also use campanelle, cavatappi, or shells)
  • 3 cups whole milk
  • 1 cup packed fresh spinach
  • 3 tablespoons unsalted butter
  • 3 tablespoons flour
  • 4 cups grated white cheddar cheese
  • 1 teaspoon kosher salt
  • 2 cups chopped broccoli florets
  • 1 cup peas


1. Preheat oven to 350° F.

2. Cook pasta in salted water for about 3 minutes less than package directions call for, until al dente. Reserve half a cup of the pasta water and strain. 

3. While the pasta is cooking. Place the milk and spinach in a blender and blend on high speed until smooth.  

4. In a large pot melt the butter and then add the flour, whisking continuously over low-medium heat for 2-3 minutes to make a roux. Slowly whisk in the milk mixture and bring to a boil.  

5. Reduce heat and simmer, whisking occasionally, 3 to 4 minutes, or until sauce is gently bubbling and starting to thicken. 

6. Add reserved pasta water and cheese and whisk until melted. Stir in the pasta, salt, broccoli and peas.  

7. Transfer to a greased 13″ x 9″ baking dish and bake for 20 minutes, or until cheese is bubbling and the pasta is set.
