Do you like crispy fried potatoes? I don't know many people who don't, especially when they're in the form of hash browns, all golden and crunchy on the outside and moist and tender on the inside. And when served alongside a perfectly cooked egg, it makes for brunch-time excellence.

But what if that egg was cooked on top of the potatoes? Now we're getting somewhere even more exciting. The result tastes equally delicious, but it looks just like a beautiful bird's nest. Pretty fancy, but hard to do? Not at all. In just a few easy steps you can create this adorable and memorable dish.

When it comes to holidays and special occasions in our house, we tend to overdo it in the food department. Mother's Day is no exception. Hubby generally ends it by cooking us dinner, but the kids start it off by making me a surprise breakfast in bed. In the past few months Chloe has become the official egg cracker in the house. She's gotten really good at it and likes to practice a lot. Thankfully I've been buying loads of Safest Choice pasteurized eggs. She went through a lot of them helping me test this recipe!

Egg and Crispy Potato Nests (makes 6 servings)

Prep Time: 5 mins Cook Time: 6 mins

Ingredients

  • 1 large russet potato
  • 1 teaspoon oil
  • 6 large eggs

Preparation

1. Peel the potato and grate it on the large holes of a box grater.

2. Place the grated potato on a kitchen towel or paper towel, wrap it up, and squeeze out all the water. Make sure the potatoes are very dry.

3. Heat the oil in a saute pan over medium heat.

4. Add 1/4 cup of the grated potatoes to the pan, adding as many as will fit, and make a hole in the center of each.

5. Cook for 3 minutes, flip, then crack an egg into each potato nest and cook an additional 3 minutes, until the potatoes and eggs are cooked and set.

    I really want to make those nests right, tried 5 times. Egg spills, potatoes are uncooked. I bought a new pan maybe that's what I need but how about the egg spilling? Can you make this recipe into a video?

      You need to get your pan a little more hot before adding the eggs! If the pan is hot enough, the eggs will begin to cook the second they hit the pan and won't spill!
