Why I Love This Recipe
- Easy to Make: This Salmon with Fennel, Citrus, and Olives is as simple as it gets! Layer fennel, lemon slices, and olives over the salmon, pop it in the oven, and you’ve got a stunning dish that’s sure to wow any guest. Another easy salmon recipe — Air Fryer Salmon!
- Infused with Flavor: The bright flavors of the lemon and fennel compliment the richness of the salmon and olives in a beautiful way. Baking the salmon this way keep all the juices in tact so it’s cooked to perfection and infused with all of the flavors of each ingredient.
- Versatile and Customizable: This method isn’t just for salmon! Swap in halibut or cod for equally delicious results. It’s my go-to for entertaining—simple, elegant, and always a crowd-pleaser.
- Easy to Pair: This recipe is such a showstopper that you can pair it with anything really simple and let it shine. I usually go with a side of Grilled Lemon Asparagus and Perfect Brown Rice or Brown Rice Cakes with this one but you can make whatever you like!
The Ingredients

- Salmon: The star of the dish! Salmon is rich, flaky, and packed with omega-3s, making it as healthy as it is delicious.
- Fennel: Fennel’s subtle anise flavor adds a unique aromatic touch that perfectly complements the salmon.
- Lemon: Lemon brings brightness and acidity, balancing the richness of the fish while adding a fresh citrusy aroma.
- Olives: Castelvetrano, Kalamata, or black olives work beautifully. Their briny, salty bite enhances every layer of flavor.
- Capers: Tiny bursts of tangy, salty goodness! Capers are one of my favorite ingredients of all time.
- Olive Oil: A drizzle of olive oil ties everything together and helps the flavors meld while keeping the salmon moist.
