Rainbow Waffles

Ingredients

  • 1/2 cup carrot, grated
  • 1 cup zucchini, grated
  • 1/4 cup red bell pepper, diced
  • 1/4 cup corn kernels
  • 1/2 cup red onion, diced
  • 2 large eggs
  • 1/2 cup all purpose, white, wheat or chickpea flour
  • 1/2 teaspoon garlic powder
  • 1/4 cup mozzarella cheese, grated
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder

Preparation

1. Place the carrots and zucchini in a cloth towel and squeeze in a ball to drain off as much liquid as possible. 

2. Place all of the ingredients in a bowl and stir to throughly combine.

3. Pour 1/3 cup of the mixture in waffle iron and cook according to waffle iron directions. 

4. Remove and serve with ketchup, mustard or on their own.
