Keeping lunch new and exciting can be challenging! The same old peanut butter and jelly sandwich every day can get old, so I’m always dreaming up ways to keep my kids engaged when it comes to eating (and enjoying) their lunches at school. I want their lunch boxes to come home empty every time! I added these Turkey Pickle Roll Ups to my lunch box rotation recently and they disappear!
Roll Ups are one of my favorite ways to turn something simple into something a little more visually exciting. I’ve make Rainbow Roll Up Sandwiches, Grilled Pizza Roll Ups and Sushi Sandwiches which my three have loved for years. I can’t believe it took me this long for Turkey Pickle Roll Ups considering how much all of my kids LOVE pickles. They’ll crunch on a dill pickle spear in a heartbeat.
A healthy and filling lunch for my kids is one of my top priorities. Turkey Pickle Roll Ups
Ingredients
- 1 package turkey deli meat
- 1/2 cup whipped cream cheese
- 4 whole dill pickles
Instructions
- Spread turkey with whipped cream cheese, using about 1 Tbsp cream cheese for each slice.
- Place one pickle spear on turkey slice. Roll up.Â
- Cut each roll-up into 4-5 pieces. Secure with toothpicks, if desired.
