Waffle Heart Sandwiches_ A Special Valentine's Lunch

Nothing says I love you quite like these Waffle Heart Sandwiches for Valentine's Day! 

This weekend I had the honor of participating in a joyful benefit for The Pablove Foundation. The mission of Pablove is to fund pediatric cancer research and advances in treatment, educate and empower cancer families, and improve the quality of life for children living with cancer through hospital play, music and arts programs. 

The Pablove Foundation is named after Pablo Thrailkill Castelaz who was six years old when he lost his valiant yearlong battle with bilateral Wilms Tumor, a rare form of childhood cancer. Imbued with his spirit and inspired by his strength, Pablove is dedicated to the daily, global fight against childhood cancer and the suffering that comes in its wake.

The benefit featured all kinds of arts and crafts tables with the most brilliant activities for both kids and adults. Since the event is the weekend before Valentine's Day, the crafts focused on love and hearts, so when planning my table, Waffle Heart Sandwiches seemed like a fun choice. 

Kids packed my station all day, making one, two, sometimes even three sandwiches, cutting out the bread into hearts with a cookie cutter, filling them with cream cheese and raspberries, and finally, popping them into the waffle iron for the big finish. I love these sandwiches too because they're totally customizable. You can add any filling you want and they'll be equally delicious! 

Watching all the sweet kids fill the room with so much love this weekend reminded me of just how precious life is and it was nice just to focus on simple joys like making art or a just a cute little sandwich. It really did my heart good.

Waffle Heart Sandwiches_ A Special Valentine's Lunch (serves 2)

Prep Time: 2 mins Cook Time: 4 mins


  • 4 slices sandwich bread
  • 2 tablespoons whipped cream cheese
  • honey, to taste
  • 6-8 fresh raspberries


1. Preheat waffle iron.

2. Using a large heart shaped cookie cutter, cut the bread into hearts.

3. Spread half the cream cheese on 1 heart and drizzle with honey to taste. Flatten the raspberries by opening them up with your fingers. Place 3-4 raspberries on top of the cream cheese and top with another plain piece of heart bread. Place the sandwich in the waffle iron for 3-4 minutes or until golden brown.

4. Repeat with remaining ingredients and serve.
