Sweet Potato "Fries"

Someone asked me yesterday, "How long does it really take to make baby 
food?" Honestly, it's really fast and easy. This recipe took me 
4 minutes and Kenya was in the kitchen with me playing while I cooked.
I washed 3 sweet potatoes (2 to make puree and one to make fries). I turned on the oven, cut up one to make fries and put the other 2 in the 
oven. In less then an hour I had 14 baby servings of puree, enough fries for Kenya to snack on for 2 days and the remainder for my 
husband and me for dinner. Really, it's that simple. And when it comes down to it, who doesn't love French fries? Yes, they're delicious when they're fried up in oil, but not exactly healthy. When baked, they're soft and perfect for babies with a few teeth (or even a bunch of teeth) to snack on. I've even made them in chip form for dinner parties and my guests loved them.

Sweet Potato �Fries�

  • Prep Time:5 minutes,
  • Cook Time: 30 minutes,
  • Total Time: 35 minutes,

Ingredients

  • 1 large sweet potato
  • 1 tablespoon olive oil

Preparation

  1. 1. Preheat oven to 425 degrees.
  2. 2. Cut sweet potato into 2 Inch batons which resemble french fries. You can
  3. also cut them in long wedges so they resemble steak fries.
  4. 3. Place them on a cookie sheet and drizzle with olive oil. Toss until
  5. the sweet potatoes are coated with oil.
  6. 4. Place cookie sheet in the middle of the oven and bake for 15 minutes (Keep an eye on these little suckers. They go from golden to burnt quick!).
  7. 5. With a spatula, flip the potatoes, and continue to bake another 15 minutes or until they have a golden color.
  8. 6. Cool and serve.
  9. *To Freeze: After Step 2, simmer the potatoes in lightly salted water until just tender. Drain well. Then spray a sheet pan with non-stick cooking oil and spread the partially cooked potatoes in a single layer on the pan. Place the pan of potatoes in the freezer and leave them there until they are solidly frozen. Transfer the grated potatoes to freezer bags or containers to use as needed. When ready, thaw and follow steps 3-6.

    This is an awesome website! My 10-month old recently decided he was over purees. I tried these Sweet Potato “Fries” with him and he gobbled them up. I also had quite a few :P Can’t wait to try more recipes.

    I also ended up with soggy fries. I used a japanese sweet potato. Also, I used ghee (oven 375) instead of olive oil as virgin olive oil shouldn’t be heated to high temps and I don’t use refined oils, so I didn’t use refined olive oil. Do you think it’s the oven temp, oil, or something else? Thanks!

    Mine keep coming out soggy. Are they supposed to be crisp? Or at least somewhat crisp? Any suggestions on how to make them a little less soggy would be great.

    I have been making baked sweet potato fries in our house too. Basically the same recipe but I add a little cinnamon. We all love them! Love your site!

    Do you peel them first?

      You can peel them or not peel them, it’s up to your liking :) We like the skin since most of the nutrients are in there

    Can these be frozen to be used later? If so, for how long? Will this work with regular potatoes too?

      You wouldn’t be able to freeze them after you bake because they will lose their texture but you can freeze them before you bake them off. *To Freeze: After Step 2, simmer the potatoes in lightly salted water until just tender.     just tried these today, be really careful to not burn them…i know it said in the recipe but i ended up burning the ends a bit! really good, its like candy to your kids, theyre so sweet, they dont even know there eating something good
