Waldorf Salad
Ingredients
- 3/4 cup celery, chopped (about 3 stalks)
- 2 Granny Smith apples, peeled and cubed
- 1 cup grapes, halved or quartered depending on size
- 1/3 cup dried cranberries, chopped
- 1/3 cup walnuts, chopped
- 1/4 cup mayonnaise (or vegan mayonnaise)
- 1/4 cup plain Greek yogurt
- 3 tablespoons orange juice
- 1 tablespoon honey
- 1 teaspoon kosher salt
Instructions
- Combine the first 5 ingredients in a bowl.
- Stir the remaining ingredients in a separate bowl until combined and pour over the apple mixture.

OOPS, except we leave out the walnuts when we’re packing in lunchbox because of the no nut policy at my children’s school.
We like to wrap this up in a tortilla with romaine lettuce for anyone who needs an idea of how to use up leftovers. It’s delicious and it gives the kids something else to pack in their lunchbox that’s has no nuts. Cheers!

I made this Christmas morning and it was absolutely delicious!
After a week of so much heavy holiday food, this was a great break for dinner last night! I used Nayonaise instead of traditional mayo, and I made a little extra dressing and added about 1 1/2 cups of cooked cubed chicken breast–it made for a great one dish meal with a little bread on the side!
I jsut made this for tomorrow. Left out the celery cause neither my husband nor I are big fans.
