How many foods do you rely on… I mean really rely on every week that if you didn’t have them on hand you would be in a bind? For us that food would be sweet potatoes! Just this weekend I bought 8 big ones to bake_ four whole to munch on through the week and the other four to turn into Potacos and these Sweet Potato Fries. They’re so darn good, easy to make (you only need a sharp knife and a little bit of oil) and I’ve never met someone who didn’t want to grab a handful right off the cookie sheet out of the oven. You can totally jazz them up by making Cinnamon Sweet Potato Fries, but most of the time I’m a purest and make them just like this. For this Rewind Wednesday I’m calling back to one of our family favorites.

Don’t take my word for it, though, make a batch and try them out on your family to watch the results disappear!

Someone asked me yesterday, “How long does it really take to make baby 
food?” Honestly, it’s really fast and easy. This recipe took me 
4 minutes and Kenya was in the kitchen with me playing while I cooked.

I washed 3 sweet potatoes (2 to make puree and one to make fries). I turned on the oven, cut up one to make fries and put the other 2 in the 
oven. In less than an hour I had 14 baby servings of puree, enough fries for Kenya to snack on for 2 days and the remainder for my 
husband and me for dinner. Really, it’s that simple. And when it comes down to it, who doesn’t love French fries? Yes, they’re delicious when they’re fried up in oil, but not exactly healthy. When baked, they’re soft and perfect for babies with a few teeth (or even a bunch of teeth) to snack on. I’ve even made them in chip form for dinner parties and my guests loved them.

Sweet Potato Fries

Ingredients  

  • 1 large sweet potato
  • 1 tablespoon olive oil

Instructions 

  • Preheat oven to 425 degrees.
  • Cut sweet potato into 2 Inch batons which resemble french fries. You can
  • also cut them in long wedges so they resemble steak fries.
  • Place them on a cookie sheet and drizzle with olive oil. Toss until
  • the sweet potatoes are coated with oil.
  • Place cookie sheet in the middle of the oven and bake for 15 minutes (Keep an eye on these little suckers. They go from golden to burnt quick!).
  • With a spatula, flip the potatoes, and continue to bake another 15 minutes or until they have a golden color.
  • Cool and serve.
  • *To Freeze: After Step 2, simmer the potatoes in lightly salted water until just tender. Drain well. Then spray a sheet pan with non-stick cooking oil and spread the partially cooked potatoes in a single layer on the pan. Place the pan of potatoes in the freezer and leave them there until they are solidly frozen. Transfer the grated potatoes to freezer bags or containers to use as needed. When ready, thaw and follow steps 3-6.

  2. This is an awesome website! My 10-month old recently decided he was over purees. I tried these Sweet Potato “Fries” with him and he gobbled them up. I also had quite a few 😛 Can’t wait to try more recipes.

  3. I also ended up with soggy fries. I used a japanese sweet potato. Also, I used ghee (oven 375) instead of olive oil as virgin olive oil shouldn’t be heated to high temps and I don’t use refined oils, so I didn’t use refined olive oil. Do you think it’s the oven temp, oil, or something else? Thanks!

  7. just tried these today, be really careful to not burn them…i know it said in the recipe but i ended up burning the ends a bit! really good, its like candy to your kids, theyre so sweet, they dont even know there eating something good
