Cucumber Avocado Salsa is a cool and refreshing side dish to serve with chips or even on top of fish or chicken.
If there are two foods I have in our kitchen at all times, it’s cucumbers and avocados. My kids love their “cukes.” They are just as likely to sit around munching on whole Persian cucumbers for a snack as if they are apples or bananas. They crave that fresh and crisp crunch of a cucumber!
Many nights, I serve sliced cucumbers and cubes of avocado as individual side dishes at dinner, so I thought, why not mix them together, add a few fresh herbs and turn them into a bright salsa! It’s a cool, refreshing side dish that you can serve alongside chips or even on top of fish or chicken. It’s great on those warm nights when you want something nutritious and light that takes little time or effort to prepare.
This Cucumber Avocado Salsa can be served as a dip with sliced vegetables, like a traditional salsa with chips, as a sauce on grilled chicken or shrimp. If you’re not simply eating it with a spoon on its own, it’s perfect alongside Fish Tacos, Mango Shrimp Ceviche or Chicken Fajitas. It’s a refreshing summer recipe no matter how you serve it.

Cucumber Avocado Salsa
Ingredients
- 1 large cucumber, peeled and diced
- 2 avocados, peeled, pitted, & cubed
- 2 tablespoons chopped fresh cilantro
- 1 tablespoon chopped fresh mint
- juice of 1 lime
- 1 tablespoon olive oil
- 1/2 teaspoon kosher salt
Instructions
- Chop and prepare all ingredients.
- Add to a large bowl and stir to combine.
Mmmmm…..I made this over the weekend and it was a hit with the adults (I’m sure my daugher will warm up to it eventually since she’s a fan of everything in it). I served it with pita chips and my husband put it on his turkey burger. It was also good on its own. I will be making this recipe over and over again especially during the Summer!

This was so crisp and refreshing! Great flavors! Mi kids are kind of purists and don’t like when I mix their food (They want the avocado and cucumber separate and not touching!), but I think they could love this one with time. For now, my husband and I love it!!
Because I did not have cukes handy, I replaced them with fresh zuchinni. I also added green apple to the mix. Yummy! Thank you for the inspiration!
Due to an unfortunate accident we no longer have cilantro in the garden but we do have plenty of mint. I made this today without the cilantro and it is a yummy combination! Thanks!
