How does a rainbow make you feel? I’ve become so rainbow obsessed over the past few years that you would think that I was an 8 year old. There’s just something about the vibrant colors that puts a big smile on my face. It would be easy to buy a pack of food dyes and add them into each layer, but besides grossing me out it’s also totally unhealthy. My Rainbow Nice Cream version is filled with what nature gave us— pure colors from fruits, vegetables, herbs and even the sea. Doesn’t it already sound better?

Nature has tons of colors and textures to offer us so it’s easy to create a full meal full of amazing rainbow dishes. How stoked would your kids be to have a menu like this at their birthday party?! (Forget the kids – I want this menu at my next shindig!)

I admit that this Rainbow Nice Cream is a labor of love. It takes about 30 minutes to make all the separate layers and then gently layering them into the glasses one by one, but it’s actually a relaxing experience watching all of the colors come together. It can be totally therapeutic if you do this after bedtime when the house is finally quiet and you can listen to your favorite podcast or watch your favorite show in peace! 

The pay off for your time is massive. After an hour in the freezer I pulled these beauties out and got to see the look of magic in my kids eyes. Chloe’s first remark was “how did you do that”?! The only way kids usually see rainbows in their food is when they’re made with food coloring. Not anymore! This Rainbow Nice Cream will make a believer of you too!

If you are going to prepare these the night before you plan to serve them, take them out of the freezer and place in the refrigerator for about 30 minutes before serving so they have time to soften up, but don’t melt completely. 

As if the natural coloring wasn’t enough to make your heart go pitter patter, they’re also free of added sugar! The only sweetness comes from potassium filled bananas as well as the other fruits and vegetables used to make the colors. Watching them whiz up in the blender or food processor to become as creamy as ice cream is like magic.

Ingredients  

  • 1 frozen banana, chopped
  • 3/4 cup frozen blueberries or blackberries
  • 2-3 tablespoons milk of choice
  • 2 frozen bananas, chopped
  • 1 teaspoon blue majik powder (link below)
  • 2-3 tablespoons milk of choice
  • 1 frozen banana, chopped
  • 1 handful fresh baby spinach
  • matcha green tea powder
  • 2-3 tablespoons milk of choice
  • 1 frozen banana, chopped
  • 3/4 cup frozen mango
  • 1 teaspoon dried turmeric
  • 2-3 tablespoons milk of choice
  • 1 frozen banana, chopped
  • 2 packs (about 1/2 cup) frozen pink dragon fruit
  • 2-3 tablespoons milk of choice
  • 1 frozen banana, chopped
  • 1/4 cup frozen raspberries
  • 1/2 cup frozen strawberries
  • 2-3 tablespoons milk of choice

Instructions 

  • Starting with the purple layer, place all the ingredients for 1 color in a food processor or blender and pulse until thick and creamy like soft serve ice cream. Pause between every few pulses and use a spatula to push down the ingredients. 
  • Pour the purple nice cream into the bottom of two tall glasses, and place in the freezer while you make the next layer. Freezing between layers will ensure the colors don't bleed or blend together. Repeat with each remaining color. 
  • Once finished with the layering, freeze for 1-2 hours until thicker and spoonable.
