Raise your hand if you’re on a food budget! You can still send your kids to school (and even yourself to work) with a fun lunch that’s super nutritious, has a variety of tastes and costs around $3! The majority of these ingredients like the frozen broccoli, tortillas, grated mozzarella cheese, chickpeas, Bragg’s and sesame seeds I always keep on hand. Whenever I go to the grocery I’m always looking for sales and when I do I buy a bunch to stock up my pantry. 

I ran my ingredient numbers for this lunch through Instacart (you may find them cheaper in your hood) and this lunch came out to be $3 on the nose, for a mix of conventional and organic ingredients (it would be $4.33 all organic). What’s your fave affordable lunch recipe or affordable ingredient?
