These Cinnamon Banana Waffles are my favorite way to turn a couple of ripe bananas into breakfast. They’re made with a mix of all-purpose and whole wheat flour so they’ve got a little heartiness to them. Best of all, they come together in about 15 minutes, which makes them just as easy on a busy weekday as they are for a weekend brunch. Top with maple syrup, fresh fruit, or your favorite waffle toppings!

What I Love About These Waffles

This homemade waffle recipe with bananas is one of my favorite easy brunch and breakfast recipes. It’s earned a permanent spot in my morning rotation:

  • Naturally sweet: Ripe bananas do a lot of the sweetening, so they taste great with just a touch of honey.
  • Quick and easy: They come together in about 15 minutes with basic ingredients you probably already have.
  • Totally topping-friendly: They’re the perfect base for fresh fruit, nuts, chocolate chips, or a good pour of maple syrup.
  • Kid-approved: These waffles served with Crispy Fried Eggs and bacon is my kids favorite breakfast ever.

How to Make Banana Waffles Ahead

This is exactly the kind of easy banana brunch recipe you can get ahead on, which is a lifesaver on busy mornings. I get a lot of messages from parents asking for fast but filling breakfast ideas, and while these won’t hit the table in 60 seconds, they’re simple to prep in advance. Here are two easy ways:

  • Prep the night before: If the thought of making something from scratch at 7am sounds like a lot, you can mix the wet and dry ingredients separately the night before! Then, all you have to do in the morning is mix them together in a bowl and scoop some batter into the waffle iron. Simple.
  • Freeze a big batch: Make a double (or triple!) batch of these waffles on the weekend and store them in labeled freezer bags. On busy mornings, pop them in the toaster or toaster oven and serve with fresh fruit, syrup or a dollop of Coconut Whipped Cream.

Bananas Not Ripe Yet?

Ripe bananas are the key to the best flavor here, the riper they are, the sweeter your waffles. If yours aren’t quite there yet, place them on a rimmed baking sheet (poke a few holes in each one first so they don’t burst) and roast at 350°F for about 15 minutes to bring out their natural sweetness. Let them cool before adding them to the batter.

Ingredients

Dry Ingredients

Wet Ingredients

  • 3/4 cup milk
  • 1 large egg
  • 1 tablespoon honey
  • 1 teaspoon vanilla extract
  • 2 ripe bananas, mashed

Instructions

  • Preheat waffle iron.
  • Combine the dry ingredients in a bowl.
  • Combine the wet ingredients in a separate bowl.
  • Slowly add the dry ingredients to the wet until just combined. Don’t over mix, a few lumps are fine.
  • Pour 1/2 cup of batter into a greased waffle iron and cook for 3 to 4 minutes, or according to your waffle iron’s directions.
  • Serve with desired toppings.

Notes

Honey swap: Making these for a baby? Honey isn’t recommended for children under 1, so swap it for the same amount of maple syrup or agave. The waffles turn out just as good.
Keep them crisp: To keep the waffles warm and crisp while you finish the batch, set them on a wire rack in a 200°F oven instead of stacking them, since stacking steams them soft.
Freeze and reheat: Freeze leftover waffles in labeled freezer bags, then reheat in the toaster or toaster oven until warmed through. Serve with your favorite toppings.

  1. I know you are quite into “green” and healthy products. Am wondering what sort of waffle iron you use? I’ve tried to purge teflon from my home, and all of the waffle irons I’ve seen are made of Teflon. Any ideas???

  2. A bit late in replying but it’s possible you over mixed the wet and dry ingredients together. Waffle and pancake mix should be mixed until just combined (lumps are ok) or else you end up with chewy waffles and pancakes! I hope you’ve had better luck with them since!

  3. I made this morning and they were very yummy! Although, they were a bit chewy — any thoughts on why that would be? (I did use soy milk instead of milk in the recipe, but I don’t think that should affect it.)

  4. I will try this soon as I have some bananas left 🙂 but I am going to serve the waffles for lunch. I am from Germany and our breakfast is a bit different from the American. We eat bread, muesli and other cereals for breakfast. My kids eat cereals most time at home and get a breakfast bento with bread for school and on the longer schooldays also a packed lunch.
I really like to see what dishes you prepare for your family. I have already tried some of your recipes 🙂 Thanks for all your efforts!

  5. Ahh your wonderful recipes using too ripe bananas never seize to amaze! Bananas go fast in my house but I buy a bunch and am always looking for ways to use them when they get too ripe. Thanks so much for yet another wonderful recipe!

  6. I have a tiny fridge so having 2 bowls in the fridge just wouldn’t work. Could I mix up the batter in one bowl or do the wet and dry really have to be separate overnight?

  7. This couldn’t have come at a better time! I know we’re only in month 2 of school, but I was totally in a breakfast rut already! Thank you so much for your recipes and inspiration to make them!! 🙂

  8. I would go to Target, Walmart, Sur La Table etc.. and check out their selection to get something that fits your space.

  9. Looks delicious. I’m looking for a good waffle iron that doesn’t take up much space. Any recommendations?

  10. These look wonderful! I am always looking for new healthy waffle and pancake recipes to add variety. I always make large batches of pancakes, waffles and french toast on the weekend, freeze, and then – viola! Breakfast is ready for busy school mornings. I always include some whole wheat flour and flax seed meal in our breakfasts, too. Great with all natural chicken breakfast sausage to add protein.

  11. Perfect find! I just eyebald the v. ripe bananas (2) in the kitchen, went under weelicious… and voila!

    Bananas are saved! 😀

  12. We make these waffles all the time and freeze them. I keep frozen ripe bananas just for waffles–so easy;-)
