  • Lasagna noodles: Regular dried noodles. No need for “oven-ready.” Break them to fit your slow cooker.

  1. Cook the turkey: Heat 1 tablespoon of oil in a large sauce pot over medium heat. Add the turkey and cook for 5 minutes, until cooked though, breaking apart any chunks with the side of a wooden spoon to make bite sized pieces. Remove the turkey to a plate, and then drain the liquid.

  1. Make the sauce: Add the remaining 1 tablespoon of oil to the pot, then onions and cook for 5 minutes, until soft. Add the garlic and cook for 1 more minute. Return the turkey to the pot, add the drained tomatoes, tomato paste, salt and Italian herbs. Bring to a boil, and cook for 3-5 minutes, until the sauce thickens slightly.

  1. Mix the cheese filling: In a bowl, whisk the eggs and mix in the cottage and parmesan cheeses.

  1. Layer in the slow cooker: Spread a thin layer of sauce in the bottom of the slow cooker. Add a single layer of the dried lasagna noodles (I break them into pieces and slightly overlap to fit the crock pot), 1/3 of the cottage cheese mixture, and 1/3 of the mozzarella cheese. Repeat layering until you have 3 layers of each, ending with mozzarella cheese.

  1. Cook, rest & serve: Cover and cook on low for 4-6 hours until the noodles are tender. Turn off the crock pot, remove the lid, and allow to rest for 20 minutes before serving. This will help the lasagna keep its shape.

  • 2 pounds dark meat ground turkey
  • 2 tablespoons oil, divided
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 2 28-ounce cans diced tomatoes, drained
  • 2 6-ounce cans tomato paste
  • 1 tablespoon dried Italian herbs
  • 2 teaspoons kosher salt
  • 2 large eggs
  • 3 cups low-fat cottage cheese
  • 1 cup grated parmesan cheese
  • 16 ounces (about 4-5 cups) grated mozzarella cheese
  • 1 pound dried lasagna noodles, uncooked

  3. Ok, so, first off, Crock Pot vs Slow Cooker….

    My hubs nitpicks on this one a lot. 🙂 Kleenex vs Tissue, Q-tip vs cotton swab, Coke vs pop/soda. Part regional, part common usage, it all boils down to brand vs product. Most people would ask for a kleenex rather than a tissue, no matter the brand in the box because kleenex has become synonymous for tissues, who doesn’t call a cotton swab a tooth pick these days? And a Crock Pot is simple a brand of slow cooker. 🙂

    That said, OMG THAT LOOKS AMAZINGLY GOOD! I just got myself a new to me crock pot at a yard sale recently so I’m looking forward to trying it out! Might have to be with this recipe!

  4. This turned out delicious, but I would love to see a video of this (or your veggie lasagna) for proper technique. I think I really screwed up the proportions because I had a whole lot of the tomato sauce leftover (enough to make a whole pot of spaghetti with…) but didn’t seem to have enough of the cheese mixture. However, the flavor is great and we’ve been happily eating it as a leftover for days!

  5. Made this yesterday it was very good. I think my crock pot must cooks fast, I had it on low for 4 1/2 – 5 hrs and it was a little burned on the bottom. so it was a little dry, next time less time and I will add mushrooms. Nice coming home and dinner was ready!!!

  6. My mother-in-law taught me to make oven lasagna with dry noodles 43 years ago. She passed in July last year. Miss her. Will make this for ease but will use homemade low fat ricotta. I love the stuff.

  7. This recipe is awesome! I’m so excited to try it this week! However, one little issue… My 2 year old recently won’t go near anything with tomato chunks. Could I just omit the diced tomatoes? Or would I need to add something else in its place to get the right consistency?
