Cupcakes for Breakfast!

Cupcakes for breakfast? Absolutely! Even when it's not one of the kids' birthdays I will still make these mini cupcakes as a special treat to start everyone's day. They're basically a peanut butter and jelly pancake muffin, so the ingredients are a bit more wholesome than your everyday cupcake and use a lot less sugar. I call them cupcakes because who doesn't like cupcakes?

    What can we replace the peanut/almond/sunflower butter with? Can we use cream cheese instead inside the batter., in addition to the top?

      The same thing happened at my job. The month berofe I was finished (and moving overseas), I worked 12 hour days and even went in on my days off. It was insane. And like you, I did interviews for my position as well!

    Funny story….my oldest daughter refused to eat muffins but if we called them “cupcakes” she’d eat them. One day silly me let it slip that they were muffins and she refused to eat them for years. Even now she doesn’t like muffins but loves cupcakes….kids are so weird!
