Air Fryer Tortilla Pillows are crispy on the outside, warm and melty on the inside, and made with just three ingredients you probably already have on hand. Fold them up, pop them in the air fryer, and lunch is on the table in under 10 minutes.

  • Easy enough for kids to make themselves. Older kids can handle the whole thing start to finish, which is a win for everyone.
  • Endlessly flexible. Swap the fillings, change the cheese, add whatever you have on hand — this recipe is hard to mess up.

You only need three things to make this recipe as written, though the Tips and Variations section below has plenty of ways to mix it up.

  • Whole wheat tortillas: Twelve-inch tortillas are the right size here — big enough to fold into a neat little pillow without being floppy or too thick. Whole wheat is what we use, but flour tortillas work just as well.
  • Refried beans: Canned refried beans are perfectly fine and what I use on a busy weeknight. Traditional or fat-free both work. If you want to make your own, these Pressure Cooker Pinto Beans mash up beautifully into a homemade version.
  • Shredded cheese: Cheddar or a Mexican blend both melt great here. About half a cup per two tortillas is the sweet spot.

  1. Lay your tortillas flat. Place both tortillas on a flat surface in front of you. Divide the refried beans evenly between them, spreading the beans onto the center of each tortilla. Top with the shredded cheese.

  1. Fold into pillows. Fold in the two sides of each tortilla, then fold in the top and bottom to form a square packet. If your tortillas feel stiff or crack when you try to fold them, microwave them between two damp paper towels for about 10 seconds first — that makes them pliable and easy to work with.

  1. Air fry. Lightly spray or coat the air fryer basket with olive oil. Place the tortilla pillows folded side down so they stay sealed while they cook. Air fry at 400°F for 8 minutes, or until the outside is golden and crispy and the filling is warmed through.

  1. Serve. Let them cool for a minute before serving (the inside gets hot!). Slice in half if you’re serving to little ones, and set out any dipping sauces you like.

Tips and Variations

  • Make it heartier: Add a spoonful of salsa, a few slices of avocado, or some leftover taco meat to the filling before folding. Air Fryer Roast Chicken is another great option if you have some on hand.
  • Oven option: If you don’t have an air fryer, bake at 350°F for 20 minutes. You’ll still get a crispy result, just not quite as fast.
  • Make it a meal prep lunch: These make a great kids lunch to prep ahead for the week. They hold reasonably well in the fridge for a day or two — just reheat in the air fryer for a few minutes to get the crispiness back. The microwave will make them soft.
  • Scale it up: The recipe as written makes two tortilla pillows, but you can easily double or triple it. Just cook in batches so they’re not crowded in the air fryer basket.

What to Serve With / Dipping Sauces

These are great on their own, but a dipping sauce takes them to another level. Here’s what we reach for most:
