When the leaves start to change colors and it gets a bit cooler outside I have a one track mind and can only think of one thing: pumpkin! The kids started asking me to make dishes with it starting in September, so I’ve been playing around with a bunch of recipes including this epic Mug Pumpkin Mac and Cheese which is bonkers! Whether you’re making one, two, three or more servings it can all be done in individual mugs making it just as easy for kids to whip up as adults. When it comes to flavor and texture, though, it’s all about my one secret weapon: milk! It may sounds simple, but I try to keep the dish as light as possible and adding milk gives it that creamy texture, so that every bite of the sauce cuddles the noodles in every single bite.
We drink milk every single day for a few simple reasons: when the kids drink an 8 ounce glass of milk I know they’re getting 8 grams of protein plus essential nutrients like calcium, potassium and vitamin D. Plus, it’s incredibly hydrating and penny for penny, milk offers more nutrition than just about any other drink.
The fact that I keep milk, pasta, cheese and pumpkin on hand at all times is a bonus to the ease of making this mug pumpkin mac and cheese. Don’t have a microwave? You can also prepare it on the stove. It’s all about the seasons and making a dish that fills your heart and soul.
Pumpkin Mac and Cheese in a Mug
Ingredients
- 1/2 cup pasta (fusilli, macaroni or other small pasta shape)
- 1/2 cup water
- 3 tablespoons milk
- 2 tablespoons pumpkin puree
- kosher or sea salt
- 1/2 cup shredded cheese
Instructions
- Cook pasta and water for 1:30-2 minutes in a 10 ounce mug stopping a few times towards the end to stir to prevent water from boiling over.
- Add milk, pumpkin puree and salt and and continue cooking for 1-2 minutes stopping to stir occasionally. Cover and allow to rest for 3-5 minutes. Check pasta to make sure it’s cooked through.
- Stir in cheese, cover for 1 minutes until melted and serve.
- * The macaroni and cheese will continue to thicken the longer it sits
