From the time they were old enough to eat solids, both of my kids loved avocados. Avocados are a lifesaver for moms on the run who have new eaters because they come in their own durable package, are healthy and filling, and when they are really ripe have a perfect smooth texture for babies. They are a most incredible fruit, packed with potassium, folic acid, and lots of fiber.

Over the years I’ve mashed avocados into reader favorites like Avocado Hummus, Big Kid Guacamole, and Kale Avocado Salad — I’ve even used them in a shake, but to understand just how versatile the avocado is, you have to see what my sweet friend Gaby Dalkin (see video below!) does with them — it’s pure magic.

I adore Gaby’s cookbook Absolutely Avocados. It’s opened a whole new culinary world to me, and that’s saying a lot! Gaby came over to my house one day to shoot a video for one of her specialties, Goat Cheese Guacamole. In two words, it’s crazy good!

  4. Hi! Our family business is the largest producer of sun dried tomatoes in the U.S. and I was wondering if you might be interested in receiving our media kit and free product samples in exchange for an honest & free review on your blog? Or you can just include us in a great recipe that you’ve created. I look forward to hearing back from you.

  6. Oh my gosh, this sounds SERIOUSLY delicious! Guacamole with goat cheese AND sundried tomatoes??? YUM! I think I must buy Absolutely Avocados as they are one of my favorite ingredients!

  8. oh my goodness, you two are amazing! can we please have a food posse fiesta?

  9. It’s a generous spoonful of the food. The child eats the small portion given to them and if they still don’t like it after trying it then they can say, “no thank you” and not eat anymore!

  10. This sounds like a great way to use up some of the fresh goat cheese I make every week! Looking forward to checking out Gaby’s cookbook.
