How to Make Goat Cheese Guacamole

From the time they were old enough to eat solids, both of my kids loved avocados. Avocados are a lifesaver for moms on the run who have new eaters because they come in their own durable package, are healthy and filling, and when they are really ripe have a perfect smooth texture for babies. They are a most incredible fruit, packed with potassium, folic acid, and lots of fiber.

Over the years I've mashed avocados into reader favorites like Avocado Hummus, Big Kid Guacamole, and Kale Avocado Salad -- I've even used them in a shake, but to understand just how versatile the avocado is, you have to see what my sweet friend Gaby Dalkin does with them -- it's pure magic.

I adore Gaby's new cookbook Absolutely Avocados. It's opened a whole new culinary world to me, and that's saying a lot! Gaby came over to my house one day to shoot a video for one of her specialties, Goat Cheese Guacamole. In two words, it's crazy good!
