Variations and Substitutions
- What Type Baby Potato? I used gold baby potatoes to air fry because I love how creamy they are and get super crispy on the outside. Red, purple or yellow baby potatoes (or a multicolored combination) would be great! You could also use fingerling potatoes. Just ensure you cut them into relatively uniform sizes so they cook evenly.
- Seasoning Variations: The best part of air frying baby potatoes and customizing the seasonings! Here are some ideas.
- Garlic Herb: Toss the potatoes with garlic powder, dried thyme, rosemary, and parsley for a classic and aromatic seasoning.
- Lemon Pepper: Use your favorite lemon pepper seasoning blend or zest some fresh lemon over the potatoes and sprinkle with black pepper and a touch of salt for a bright and zesty seasoning.

How to Make Baby Potatoes in the Air Fryer

Step 1: Wash potatoes thoroughly under water and pat dry with a kitchen towel. Cut potatoes in half. Add potatoes, olive oil and seasoning of choice to a bowl. Mix until potatoes are evenly coated in the seasoning.

Step 2: Evenly arrange potatoes in the air fryer basket. You may have to cook in batches. Heat the air fryer to 400°F and cook potatoes 22-25 minutes or until tender inside and golden and crispy on the outside.

Step 3: While the potatoes are cooking, place the sour cream, mayo, lemon juice, garlic powder and chives in a small bowl and stir to combine to make the dip.

Step 4: Once the baby potatoes are cooked to perfection, transfer them to a serving dish and garnish with fresh herbs, if desired. Serve hot with Creamy Garlic Dip and enjoy as a delicious side dish or snack!

- Arrange in Even Layer: When air frying potatoes, you’ll want to arrange them in an even layer and not overcrowd the basket. You may have to air fry in batches to do this properly. This will help the potatoes cook evenly and get extra crispy.
- Shake: Halfway through cooking give your potatoes a little shake, or flip with some tongs. This will help them cook evenly and help them not stick to the air fryer basket.
- Check for Tenderness: When the potatoes are done cooking, poke them with a fork to check that they’re tender and ready to serve. If they need a little extra time, air fry them in two minute increments until they’re perfect.

Keep in mind that the cooking time for baby potatoes in the air fryer will depend on the size of your potatoes and the air fryer you use. Each air fryer cooks slightly differently, but on average it takes about 20-25 minutes to get perfectly crispy potatoes in the air fryer at 400°F.
If you want to skip a step and air fry your baby potatoes whole, you definitely can. I like to cut mine in half so the inside can get the delicious seasoning and they also cook quicker. If you cook yours whole, you’ll have to adjust the cooking time.
