Meal Plan -- Week 8

I've really enjoyed making these family meal plans for you all (and for myself!) every week. Keep scrolling to see Week 8. What are you most excited to make?


As always, lots of smoothies for breakfast. This week we're making Chai Beauty Greens SmoothieCotton Candy SmoothieMango Spiced SmoothieChocolate Peanut Butter Smoothie. Then for a weekend breakfast treat we're making homemade Peanut Butter and Jelly Pop Tarts.


I'm going to bake some Gluten Free Banana Bread this week for us to snack on. It's one of our absolute favorites! We're also making Frozen Yogurt Fruit Bites and Crunchy Granola Bites with fresh berries. And for a savory, healthy snack we're dipping veggies into Black Bean Hummus.


Even though I don't have any "babies" anymore (!!) we're going to have these Baby Frittatas this week for lunch! Plus Sandwich Kabobs and Avocado Toast. And then of course don't forget The World’s Greatest PB+J. I'm not exaggerating when I call it "World's Greatest". 


SundayMexican Lasagna is super simple and a fun recipe to get kids involved in the kitchen. We're having it with some Air Fryer Veggies on the side. 

Monday: One Potato to the rescue! Starting the week off with a delicious Fish and Chips recipe. This recipe has all of the flavor and crunch you love without the deep frying. Can't wait for this one!

Tuesday: Celery Root Soup with Brown Rice Cakes for Tuesday dinner. I'll probably also roast up a tray of whatever seasonal veggies I can find at the farmers market this week. 

Wednesday: Fusilli with Chia Seed Pesto and Roasted Broccoli from One Potato. This recipe is incredibly simple but packs lots of flavor with few ingredients. 

Thursday: Arepas with Latin BBQ Chicken and Sweet Corn Avocado Cups from One Potato. I linked a weelicious arepa recipe so you can try this one too if you don't get One Potato!

Friday: Keeping it simple on Friday with Air Fryer Roast Chicken with Cast Iron Brussels Sprouts with Pomegranate and Garlic and then these Oatmeal Chocolate Chip Sea Salt Cookies for dessert!

Saturday: Supporting a local restaurant!
