Meal Plan -- Week 44

Hope you all are having a fun and spooky Halloween! Here's my family's meal plan for the week. Hope it's helpful to you and yours!

BREAKFAST:

Smoothies once again for breakfast. This week we're making Immune Boosting Very Berry SmoothieVanilla Cinnamon Date ShakeChocolate Peanut Butter Smoothie and Cherry Vanilla Smoothie. For weekend brunch we've got a Sheet Pan Pancake that everyone will love!

SNACKS:

Snacks for the week are going to be Cookie Dough BitesPeanut Butter and Jelly Pop TartsCucumber Stackers, and Banana Cottage Cheese Honey Spread on toast. 

LUNCH:

On the lunch menu this week, we've got Nut Free Granola with greek yogurt and fresh fruit, plus Cauliflower Crusted Grilled CheeseShakshuka and Vegetarian Spring Rolls.

DINNER:

Sunday: Making a big pot of Chicken Tortilla Soup to fill up on before trick or treating. Plus these super cute Pizza Mummies for an edible Halloween craft.

Monday: Corn and Black Bean Taquitos with Spanish Rice and Cucumber Avocado Salsa from One Potato Box. This is one of our favorite vegetarian meals!

Tuesday: Stir-Fried Chicken in Lettuce Cups with a side of Brown Rice Cakes or you could do a simple steamed White Rice for the side.

Wednesday: We're obsessed with the Vegan Gado Gado Bowl meal from One Potato Box. We get it almost every week.

Thursday: Italian Braised Chicken with Roast Cauliflower and Avocado Toast from One Potato Box. This recipe couldn't be easier!

Friday: Southern Style Pork Tenderloin with this incredible Butternut Squash Macaroni and Cheese and Air Fryer Veggies.

 

Saturday: Order in from local restaurant!
